Raspberry Swirl Pavlova with Pomegranates

Ingredients

For the Raspberry Sauce:

  • ½ cup Driscoll’s Berry raspberries
  • 1 teaspoon lemon juice
  • 2 tablespoons granulated sugar

For the Pavlova:

  • 5 large egg whites
  • 1 ¼ cups superfine sugar
  • 1 ¼ teaspoon cornstarch
  • 2 teaspoons vinegar

Topping:

  • 1 cup heavy cream, cold
  • 1 cup fresh raspberries
  • ½ cup pomegranate seeds

Instructions

  1. In a small saucepan, combine the ½ cup raspberries with lemon juice and sugar. Cook until berries break down and thicken. Remove from heat and pass the raspberry sauce through a fine sieve. Set the juices aside.
  2. Preheat oven to 300 degrees F (150 degrees C). Line a baking sheet with parchment paper. Trace an 8-inch circle on the parchment paper using a cake pan as a guide.
  3. Using a large, clean bowl, beat the egg whites with an electric mixer until soft peaks form. With the mixer running, gradually add in the superfine sugar, one tablespoon at a time. Continue to beat until the meringue is glossy and forms stiff peaks. Gently fold the vinegar and cornstarch into the mixture to incorporate. Drizzle two tablespoons of the prepared raspberry sauce over the meringue in the bowl. Do not mix completely, allowing for a beautiful swirl.
