Guinness Pistachio Sweet Rolls with Irish Cream Cheese Glaze

Ingredients
- 1 ½ cups whole milk
- ½ cup Guinness draft beer
- ½ cup vegetable oil
- ½ cup granulated sugar
- 1 package (0.25 ounces) active dry yeast (about 2 ¼ teaspoons), I used Red Star Yeast
- 4 ½ cups all-purpose flour, divided
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- 1 ½ teaspoon salt
- ½ cup unsalted butter, melted and browned
- ¾ cup brown sugar
- ¾ cup shelled pistachios, chopped
- 4 ounces cream cheese, room temperature
- ¼ cup milk
- 1 tablespoon Irish Cream (Bailey’s), or more to taste
- ½ to 1 cup confectioner’s sugar
Instructions
To make the rolls:
- In a large saucepan or dutch-oven, heat the milk, Guinness, oil and granulated sugar over medium heat to just below a boil. Remove pot from heat and allow to cool until warm to the touch. Once warm, sprinkle the yeast over the top and let it sit for a minute to activate.
- To the warm milk mixture, add 4 cups of the all-purpose flour and stir until just combined. Cover the saucepan with a lid or plastic wrap and set it aside in a relatively warm area to allow the dough to rise for an hour. Check the dough after 30 minutes to ensure it is actively rising; if not, you may need to restart the process with fresh yeast.
- In a small separate bowl, combine the remaining half cup of flour, baking powder, and baking soda. After the dough has risen for an hour, sprinkle this dry mixture over the dough and stir thoroughly to combine all ingredients. At this stage, the dough is ready to be used immediately, or it can be covered and refrigerated overnight for baking the next day.
- When ready to bake, preheat your oven to 375 degrees F (190 degrees C). Lightly grease two 9-inch pie dishes, or baking pans of a similar size, to prevent sticking.
To assemble rolls:
- Divide the prepared dough in half. On a lightly floured surface, roll out the first half of the dough into a rectangular shape, approximately 12 x 8 inches. Evenly spread half of the melted and browned butter over the entire surface of the rolled dough using a pastry brush. Then, sprinkle half of the brown sugar evenly, followed by half of the chopped pistachios. To roll, begin at the end farthest from you and tightly roll the rectangle towards yourself, using both hands to maintain an even and snug roll. Finish with the seam side down, carefully pinching together any loose ends to seal the roll. Using a sharp knife or dental floss, slice the dough into 8 equal pieces and arrange them neatly in one of the prepared pie dishes. Repeat this entire process for the second half of the dough.
- Allow the assembled rolls to sit for an additional 15 minutes before placing them in the oven. Bake for 20-22 minutes, or until the rolls are beautifully golden brown and the filling is bubbling. Once baked, remove them from the oven and let them cool in the dishes for about 10 minutes before glazing.
To make the glaze:
- While the rolls are baking and cooling slightly, prepare the Irish Cream cheese glaze. In a mixing bowl, beat the softened cream cheese until it is smooth and creamy. Gradually add the milk, Irish cream (such as Bailey’s, adjusting to your taste preference), and confectioner’s sugar. Whisk all ingredients together until the glaze is smooth and well combined. If the glaze appears too thin, add a little more powdered sugar until desired consistency is reached. Conversely, if it’s too thick, add milk, one tablespoon at a time, until you achieve a pourable consistency.
- Generously pour the prepared glaze over the warm rolls. Serve these delightful Guinness Pistachio Sweet Rolls immediately and enjoy!
