  • 1 ¼ cup all-purpose flour
  • ¼ teaspoon salt
  • 1/3 cup shortening
  • 4 to 5 tablespoons cold water

For the Filling:

  • ½ cup chopped onion
  • 2 green onions, sliced
  • 6 slices of bacon, chopped
  • 8 large eggs, beaten
  • ½ cup dairy sour cream
  • ½ cup half and half, light cream or milk
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • dash of ground nutmeg
  • 3 cups lightly packed chopped fresh spinach
  • 2/3 cup shredded mozzarella cheese
  • ½ cup shredded Swiss cheese
  • ¼ cup goat cheese

Instructions

  1. In a medium bowl, whisk together the flour, salt, and shortening. Use a pastry blender to cut in the shortening until the mixture resembles pea-sized crumbles.
  2. Sprinkle 1 tablespoon of the cold water over the flour mixture and gently toss with a fork. Continue to sprinkle water, 1 tablespoon at a time, incorporating it until the flour mixture is just moistened and a cohesive dough starts to form.
