  • 2 cups chicken broth
  • 1 cup water
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 teaspoons oregano

For Huevos Rancheros

  • 1 teaspoon vegetable oil
  • 6-8 corn tortillas
  • 6-8 large eggs
  • 1 cup refried beans
  • ½ cup red chile sauce (from recipe above)
  • 1 tomato, diced
  • 1 avocado, sliced
  • 1 tablespoon cilantro, chopped
  • Optional: Cheese (cotija, Monterey Jack), sour cream or Mexican crema

Instructions

For Red Chile Sauce

  1. Prepare the Chiles: Begin by removing the seeds from the dried chile pods. This step is essential for controlling the heat level of your sauce. If you prefer a spicier sauce, you may leave a few seeds.
  2. Simmer Ingredients: In a medium saucepan, combine the deseeded chile pods, garlic cloves, small onion, chicken broth, water, salt, pepper, and oregano. Bring the mixture to a gentle boil over medium heat.
  3. Hydrate and Soften: Once boiling, reduce the heat and let the sauce simmer for 15-20 minutes, or until the chile pods are fully hydrated and soft. This process allows the chiles to release their full flavor. Remove the saucepan from the heat and cover it, allowing it to rest for an additional 10 minutes. This helps further soften the chiles and intensify the flavors.
  4. Blend to Smoothness: Carefully pour the contents of the saucepan into your KitchenAid® Torrent™ Magnetic Drive Blender. Blend on the “Soup” setting (or a high setting) until the sauce is completely smooth and free of any large pieces of chile skin. This should yield approximately 1 ½ cups of rich, flavorful red chile sauce.

For Huevos Rancheros

  1. Prepare Tortillas: In your KitchenAid® Tri-Ply Stainless Steel 10″ Nonstick Skillet, heat the vegetable oil over low-medium heat on your KitchenAid® Electric Convection Slide-In Range. Lightly warm each corn tortilla in the skillet for about 30 seconds per side. This makes them pliable and adds a hint of flavor. Set the warmed tortillas aside.
  2. Cook the Eggs: In the same skillet, cook the eggs one at a time to your preferred consistency. A classic huevos rancheros often features a sunny-side-up or over-easy egg with a runny yolk, but feel free to cook them to your liking.
  3. Assemble the Base: Begin assembling your huevos rancheros by spreading a generous layer of refried beans onto each warmed corn tortilla.
