Celebrating Friendship and Festive Flavors

Beyond the sheer delight of these cookies, today’s post holds a special place in my heart as we celebrate a wonderful milestone for one of my dearest and longest-standing friends in the blogging community. A few of us have secretly orchestrated a virtual baby shower for the incredibly talented Kayle of The Cooking Actress. Yes, it’s a surprise! Kayle and Michael are joyously awaiting the arrival of their first baby, and we couldn’t be more thrilled for the soon-to-be parents. In true cookie-loving fashion, we’re showering them with our favorite cookie recipes and an abundance of well wishes as they embark on this exciting new chapter.

Double Chocolate Peppermint Cookies: A Festive Treat for Special Occasions

My connection with Kayle dates back almost five years, to the very beginning of my blogging journey. Her genuine passion for baking, especially for cookies, and the warm, friendly tone of her blog posts instantly drew me in. I found myself returning week after week, inspired by her creativity and infectious enthusiasm. Kayle is an exceptional baker, renowned for her legendary addiction to brown butter and cookie dough – a sentiment I wholeheartedly share! She’s truly a kindred spirit. But more than her baking prowess, Kayle is an incredible friend, a devoted wife, and soon, she will undoubtedly be the most wonderful mother to her little one. I am beyond excited for her and Michael and have no doubt that their little boy is already the luckiest child in the world.

A Cookie-Themed Celebration: Spreading Joy, One Bite at a Time

To honor our beloved “cookie queen,” we decided a cookie-themed shower was the only fitting tribute. Each of us whipped up our favorite cookie creations to share, and you’ll find a list of these fantastic recipes from my fellow hosts at the end of this post. While a virtual celebration is lovely, the only thing that could have made this occasion even better would have been celebrating with Kayle in person, sharing these delicious treats face-to-face.

As we officially kick off the holiday season, I knew exactly what kind of cookie I wanted to bring to this festive virtual gathering: these spectacular Double Chocolate Peppermint Cookies. I realized, much to my surprise, that besides my popular Peppermint White Chocolate Cookies, our blog was missing a true double-chocolate peppermint masterpiece. These new cookies are here to fill that delightful gap and encapsulate everything a holiday cookie should be. Imagine a soft, chewy cookie bursting with not one, but two generous doses of rich chocolate, perfectly complemented by a cool, refreshing hint of peppermint in every single bite. They are incredibly indulgent, utterly satisfying, and the ideal companion for a piping hot mug of your favorite hot chocolate or coffee.

These cookies aren’t just a treat; they’re a necessity for your holiday baking repertoire. Whether you’re assembling an elaborate holiday cookie platter to impress guests, preparing thoughtful cookie exchange boxes for friends and neighbors, or simply craving a taste of festive cheer, these double chocolate peppermint wonders will not disappoint. Their vibrant flavor and appealing texture make them an instant crowd-pleaser and a memorable addition to any festive occasion.

Heartfelt Advice for the Journey Ahead: To Kayle and All New Parents

Dear Kayle, as you prepare to welcome your precious little man into the world, I wanted to share a few words of encouragement and advice. Becoming a first-time mom is an extraordinary journey, a beautiful blend of unparalleled joy and significant challenges. Please, above all else, be kind to yourself. This experience is profound and can be demanding, so remember to go easy on yourself. Give yourself grace and understanding through every new discovery and learning curve.

One of the best ways to navigate this new adventure is to graciously accept all the help that’s offered. Whether it’s a meal, an hour of babysitting, or simply a listening ear, embracing support from loved ones will not only give you much-deserved breaks but also allow your baby to bond with other important family members and friends. Remember the age-old advice: sleep when the baby sleeps. It sounds simple, yet it’s often the hardest piece of advice to follow. However, it’s absolutely crucial for your well-being and allows you to be the best, most rested version of yourself for your little one. Finally, savor every single baby cuddle. Time truly flies, and before you know it, he’ll be a curious toddler, then a spirited child, perhaps not always eager for those sweet, quiet snuggles. Cherish these moments, as they are fleeting and incredibly precious. Congratulations, my dear friend! Your journey into motherhood will be filled with immeasurable love and unforgettable memories.

Please make sure to head over to The Cooking Actress and extend your congratulations to Kayle and Michael on their wonderful new baby!

These Double Chocolate Peppermint Cookies are a holiday dream come true! Featuring a rich, dark chocolate base infused with refreshing peppermint, and loaded with chocolate chips and peppermint crunch, they’re perfectly chewy and melt-in-your-mouth delicious. The subtle espresso powder enhances the chocolate flavor without making the cookies taste like coffee. Follow these simple steps to bake a batch of festive perfection that will impress everyone on your holiday list.

Ingredients

  • 2 cups bittersweet chocolate chips (for melting and drizzling)
  • 1 1/2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder (Dutch-processed for richer color and flavor)
  • 1 teaspoon baking powder
  • 1 teaspoon instant espresso powder (optional, but highly recommended for deepening chocolate flavor)
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1 teaspoon peppermint extract
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup mini chocolate chips (for folding into the dough)
  • 1/2 cup Andes peppermint crunch baking chips (or other peppermint candy bits)
  • 2 candy canes or peppermint candies, crushed for topping

Instructions for Festive Baking

  1. Prepare Your Workspace: Preheat your oven to 350 degrees F (175 degrees C). Line two large baking sheets with parchment paper or silicone baking mats. This ensures your cookies won’t stick and will bake evenly.
  2. Melt the Chocolate: In a medium, heatproof bowl, combine 2 cups of bittersweet chocolate chips. Place the bowl over a saucepan of simmering water (a double boiler setup), ensuring the bottom of the bowl does not touch the water. Stir gently and continuously until the chocolate is completely melted and smooth. Measure out 2/3 cup of this melted chocolate and set it aside for the cookie dough. Reserve the remaining melted chocolate for drizzling over the cooled cookies later.
  3. Combine Dry Ingredients: In a separate medium bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking powder, instant espresso powder (if using), and salt. Whisk well to ensure all ingredients are evenly distributed and there are no lumps.
  4. Mix Wet Ingredients: In the bowl of a stand mixer fitted with the paddle attachment (or a large bowl with a hand mixer), cream together the softened unsalted butter and granulated sugar until the mixture is light, fluffy, and pale in color, usually about 2-3 minutes on medium-high speed. Beat in the vanilla extract and peppermint extract until well combined. Add the eggs one at a time, mixing thoroughly after each addition until just combined. Gently beat in the 2/3 cup of reserved melted chocolate until fully incorporated into the mixture.
  5. Combine Wet and Dry: Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix, as this can lead to tough cookies. Once the dough comes together, gently fold in the mini chocolate chips and Andes peppermint crunch baking chips with a spatula.
  6. Scoop and Bake: Using a 1 tablespoon cookie scoop, roll the dough into uniform balls and place them on the prepared baking sheets, leaving about 2 inches between each cookie for spreading.
  7. Bake to Perfection: Bake the cookies for approximately 8-9 minutes, or until the edges are set and the tops appear slightly cracked. The centers may still look a little soft, but they will firm up as they cool. Avoid overbaking to keep them delightfully chewy. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before carefully transferring them to a wire rack to cool completely.
  8. Decorate and Serve: Once the cookies are completely cool, drizzle the reserved melted chocolate over them using a spoon or a piping bag. Immediately sprinkle with the crushed candy canes or peppermint candies while the chocolate is still wet. Allow the chocolate to set for about 20 minutes before serving. Store any remaining cookies in an airtight container in the freezer for up to 3 months, or at room temperature for up to 5 days.
