- 3 small butternut squash, about 375 g each, cut in half lengthwise, seeds removed and peeled
- 2 tablespoons extra virgin olive oil
- 1 tablespoon Italian seasoning

- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- ⅓ cup (25 g) almonds, chopped
- ¼ cup (45 g) pomegranate seeds
- ¼ cup (45 g) goat cheese
Instructions
- Preheat the oven to 425 F / 220 C. Prepare a baking tray with parchment paper.

Use the help of 2 wooden spoons by placing them on both sides of the squash to not slice through (refer to picture for guidance). Repeat the same with all squash and place on the baking tray.
