So, in her honor, and recalling my own pregnancy cravings for deep-fried treats, I decided to make these incredible Coconut Matcha Donuts. While baked donuts have their place, sometimes, you simply need the nostalgic comfort and irresistible texture of a good old-fashioned fried donut in the morning. Nothing quite compares to that classic, fluffy bite.

These donuts are a true delight: wonderfully soft coconut donuts, crafted with coconut milk and coconut oil for a tender crumb and a subtle tropical aroma. They are then generously coated with a vibrant, sweet matcha green tea glaze, beautifully complemented by delicate hints of white chocolate. Matcha is a truly unique and versatile flavor for baking. I first discovered its incredible synergy with white chocolate years ago in a delightful cake, and I’ve been smitten ever since. The slightly earthy, robust notes of matcha perfectly balance the creamy sweetness of white chocolate, creating a sophisticated and harmonious flavor profile that is simply irresistible.

Of course, coconut has a way of finding its way into almost everything I bake, but in my defense, these donuts were initially designed to be dairy-free, necessitating the use of coconut milk. Pure coincidence, I promise! For those who aren’t keen on coconut, fear not! You can easily substitute the coconut milk with buttermilk and the coconut oil with melted butter. The resulting donuts will still be absolutely amazing, offering a slightly different but equally delicious experience. This recipe yields about 8 delectable donuts, perfect for a small gathering or a sweet treat for yourself. Ingredients

For the Coconut Donuts:

  • ¼ cup granulated sugar
  • 1¾ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¾ teaspoon salt
  • 2 cups cake flour, plus more for dusting surface
  • 1 large egg, whisked
  • ½ cup coconut milk
  • 2 tablespoons melted coconut oil
  • Vegetable oil, for frying (about 4-5 cups)

For the Glaze:

  • 1 egg white
  • 2 cups powdered sugar
  • 2 teaspoons matcha powder
  • 2 ounces white chocolate, melted and cooled
  • 1 tablespoon water, or more (as needed for consistency)

Topping (Optional):

  • Matcha Sugar (1 teaspoon matcha powder whisked with 3 tablespoons granulated sugar)

Instructions

  1. In a medium-sized mixing bowl, thoroughly whisk together the granulated sugar, baking powder, baking soda, salt, and cake flour. Create a well in the center of these dry ingredients. Into this well, add the whisked egg, coconut milk, and melted coconut oil. Using a wooden spoon or a rubber spatula, slowly and gently incorporate the wet ingredients into the dry until the dough just begins to come together. Be careful not to overmix.
  2. Turn the donut dough out onto a lightly floured surface. Knead it gently a few times until any remaining wet spots are incorporated and the dough is smooth. Avoid over-kneading, as this can lead to tough donuts. Lightly roll out the dough into a circle approximately ¼ inch thick. Using a donut cutter (or a 3¾-inch biscuit cutter and a smaller round cutter for the center holes), cut out individual donut rounds. Gather any dough scraps, re-roll them, and cut out more donuts until you have approximately 8 donuts in total.
  3. In a heavy-bottomed saucepan or Dutch oven, heat about 4-5 cups of vegetable oil over medium heat until it reaches approximately 325°F (160°C). If you don’t have a thermometer, you can test the oil’s readiness by dropping a small donut hole into it; it should float and sizzle gently when ready. Once the oil is hot, carefully fry the donuts in batches, ensuring not to overcrowd the pan. Fry for about three minutes per side, or until they turn a beautiful golden brown. Using a slotted spoon or spider, transfer the fried donuts to a wire rack lined with paper towels to drain excess oil and cool slightly before glazing.
  4. To prepare the delicious glaze, whisk together the egg white, powdered sugar, matcha powder, melted and cooled white chocolate, and 1 tablespoon of water in a bowl until the mixture is completely smooth and reaches your desired consistency. If the glaze is too thick, add a tiny bit more water, a half teaspoon at a time.
  5. Once the donuts have cooled slightly but are still warm, dip each donut individually into the matcha white chocolate glaze, ensuring it’s evenly coated. Place them back on the wire rack and allow the glaze to set for a few minutes. If desired, sprinkle with Matcha Sugar while the glaze is still wet for an extra touch of flavor and visual appeal.
  6. Store any leftover donuts in an airtight container at room temperature to maintain their freshness. While best enjoyed the day they are made, they can last for a day or two.
