Luci’s Culinary Journey: Crafting a Holiday Favorite
Hello everyone! It’s such an honor and an absolute joy to be guest posting for Zainab here on Blahnik Baker. In the vast blogging world, finding fellow creators who genuinely combine both fashion and food – especially those who develop their own unique recipes – is like discovering a hidden gem. When I stumble upon them, it’s always a reason for a happy dance, and I immediately follow their journey everywhere. That’s exactly what happened when I first found Zainab on Instagram.
I was immediately captivated by her blog name, but I must confess, in my excitement, I initially failed to delve into her actual blog content – a bit embarrassing, I know! However, as fate would have it, the blogging universe soon led me directly to her site. It was on a day when she shared a truly inspiring story about balancing life as a PhD student and a blogger. Having just earned my own PhD in History the summer before, I felt an instant, profound connection. I left a comment, and soon after, I was graced with a warm email from Zainab. Many lengthy emails and countless texts later, Zainab and I are now almost daily connecting over our shared passions for delectable desserts, the intricate world of fashion blogging, and the very unique experience of navigating life as doctoral students. It’s been an incredible journey of friendship and shared creative spirit!

The Inspiration Behind These Irresistible Bars
It feels only right that a post on Blahnik Baker be nothing short of scrumptiously delicious. And indeed, these Butterscotch Pumpkin Cake Bars fit the bill perfectly. As the holiday season gently begins to unfurl, I can already confidently say that this recipe stands out as my absolute favorite of the year. The journey to creating these bars was a delightful exploration of flavors and textures.
It all began with a simple, foundational pumpkin cake bar recipe from the iconic Martha Stewart. A fantastic starting point, but I knew I wanted to infuse it with something extra special, something to elevate it to true holiday status. That’s when I remembered the stash of butterscotch chips patiently waiting in my cupboard. The idea sparked immediately: these would make the bars truly perfect, adding a layer of rich, buttery sweetness and a wonderfully chewy texture.
As I reached for the butterscotch, my eyes caught sight of one of the many bags of sweetened coconut that my sister had recently shared with me. A wave of inspiration struck! I wasn’t entirely sure how it would integrate, but I decided to take a chance and sprinkle it generously over the top. The goal was twofold: to add a beautiful golden-brown color as it toasted and to introduce a subtle, yet distinct, tropical note to complement the warm spices of the pumpkin.
And then, of course, the walnuts. They seemed to be practically begging to be included! My love for nuts in baked goods, especially during the fall and winter months, is almost an addiction. I honestly think I’m incapable of baking without adding a generous handful of walnuts or pecans. Can you really blame me, though? The earthy crunch and nutty flavor they contribute are simply irreplaceable.
As the bars baked in the oven, my kitchen transformed into an aromatic haven. The air filled with the comforting scent of pumpkin, cinnamon, ginger, and the sweet, melting butterscotch. Life, quite literally, began to smell sweeter. When it came time for the much-anticipated taste test, my fiancé and I were, to put it mildly, completely head-over-heels in love. The way the butterscotch melted and melded seamlessly with the moist pumpkin cake was pure magic, and the toasted coconut provided a delightful textural contrast and rounded out the flavors beautifully. Fortunately, or perhaps unfortunately, we had the self-control to save the rest for a dinner party we were attending that night, narrowly resisting the urge to devour the entire pan!
Since that glorious first batch, I’ve already restocked my butterscotch chip supply, knowing these bars will be a constant request throughout the holiday season. They are absolutely ideal for Thanksgiving weekend gatherings, Christmas parties, or simply as a comforting treat on a crisp autumn evening. Get ready to bake a batch that will surely become a staple in your own holiday traditions!

Butterscotch Pumpkin Cake Bars
These cake bars begin with a wonderfully moist pumpkin cake base, generously combined with rich, gooey butterscotch chips for an unforgettable autumn treat.
20 minutes
50 minutes
1 hour 10 minutes
Ingredients
- 1 Cup all-purpose flour
- ½ teaspoon baking soda
- ⅜ teaspoon salt
- ¾ teaspoon ground cinnamon
- ¾ teaspoon ground ginger
- ¼ teaspoon ground nutmeg
- ¼ teaspoon allspice
- ¼ teaspoon ground cloves
- ¼ teaspoon ground cardamom
- ½ Cup unsalted butter, softened
- ¾ Cup granulated sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- ½ Cup pumpkin puree (not pumpkin pie filling)
- ¾ Cup butterscotch chips
- ½ Cup shredded sweetened coconut
- ½ Cup chopped nuts (pecans or walnuts recommended)
Instructions
- Preheat your oven to 350°F (175°C). Line the bottom of an 8×8 inch (or similar size) square baking pan with parchment paper, allowing extra paper to hang over the sides for easy removal of the baked bars.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, nutmeg, allspice, cloves, and cardamom until well combined. Set aside. In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl using a hand mixer, cream together the softened butter and granulated sugar until the mixture is light and fluffy. Beat in the egg and vanilla extract until fully incorporated. Add the pumpkin puree and continue beating until the mixture is smooth and creamy.
- With the mixer on a low speed, gradually add the dry flour mixture to the wet ingredients, mixing just until combined. Be careful not to overmix. Fold in the butterscotch chips until evenly distributed throughout the batter.
- Spread the batter evenly into the prepared baking pan. Sprinkle the shredded coconut over the top of the batter, followed by the chopped nuts. Bake for 40-50 minutes, or until a toothpick inserted into the center of the bars comes out with only a few moist crumbs attached. Allow the cake bars to cool completely in the pan on a wire rack before attempting to cut and serve. This ensures they set properly and maintain their perfect texture.

Baking Tips for Perfect Pumpkin Cake Bars
- Don’t Overmix: When adding the flour mixture, mix just until combined. Overmixing can lead to tough cake bars.
- Room Temperature Ingredients: Ensure butter and egg are at room temperature for a smooth, well-emulsified batter.
- Pure Pumpkin Puree: Always use pure pumpkin puree, not pumpkin pie filling, which contains added spices and sugar.
- Cool Completely: Patience is key! Allow the bars to cool entirely before cutting. This ensures clean slices and prevents them from falling apart. For best results, chill them in the refrigerator for an hour after cooling.
- Customize Your Toppings: Feel free to experiment! While butterscotch, coconut, and walnuts are a divine combination, you could try pecans, white chocolate chips, or a sprinkle of flaky sea salt for a sweet and salty twist.
- Spice Adjustment: If you prefer a milder spice profile, you can slightly reduce the amount of cinnamon, ginger, cloves, or cardamom. Or, for an extra kick, add a pinch more!
Serving Suggestions
These Butterscotch Pumpkin Cake Bars are incredibly versatile. Enjoy them:

A Delightful Fusion of Flavors
There’s something truly magical about the combination of pumpkin and butterscotch. The earthy, subtly sweet notes of pumpkin, amplified by a blend of warm autumnal spices, find their perfect counterpoint in the rich, caramel-like sweetness of butterscotch. The texture is equally enchanting: a tender, moist cake base that yields to a slightly chewy, butterscotch-infused layer, topped with the delicate crispness of toasted coconut and the satisfying crunch of walnuts. Each bite offers a harmonious balance, making these bars a standout dessert that celebrates the best of the season.
The simplicity of these bars belies their profound depth of flavor. They offer the comforting familiarity of a classic pumpkin dessert but with an elevated twist that is both sophisticated and utterly irresistible. Whether you’re a seasoned baker or just starting your culinary journey, this recipe is straightforward enough for anyone to achieve spectacular results.
