The Ultimate 7UP Pound Cake: A Recipe & Review of Grandbaby Cakes Cookbook
There’s a confession I must make: I am, unequivocally, a cookbook junkie. My journey into this delightful obsession began years ago, a fascinating evolution from being a literature enthusiast during my college days. Life took a turn with graduate school and a PhD, where the rigorous demands of science left little room for pleasure reading. It was amidst this demanding academic journey that I discovered baking – a therapeutic outlet that quickly transformed into a profound passion. This passion naturally led me to the captivating world of cookbooks, and as many of you know, that’s precisely how this blog came to life. My point is, I don’t just ‘like’ cookbooks; I absolutely, passionately adore them.
My collection isn’t merely a jumble of culinary texts; it’s a carefully curated library, albeit one prone to spontaneous growth. I categorize them into three distinct, emotionally charged piles. First, there are the cookbooks I ‘like’ – often impulse purchases, picked up on a whim. These are the ones my husband has tacit permission to rehome during his occasional, much-needed cleaning sprees. Then, there’s the pile I ‘LOVE.’ These are my sources of endless inspiration, books I regularly browse for innovative recipe ideas and stunning food photography that sparks my creativity. Titles like Mastering the Art of French Cooking, Sprinkle Bakes, and Surprise Inside Cakes reside here, offering boundless artistic and culinary stimulation.
And finally, there’s the sacred third pile – the cookbooks I simply cannot live without. These are my kitchen companions, dog-eared and flour-dusted, used repeatedly until their spines soften and pages become lovingly stained. They are indispensable for dependable, delicious results every single time. This elite group includes cherished volumes like Baking Chez Moi, my trusty BHG Bridal Cookbook, and the ever-reliable Test Kitchen series. Most recently, a phenomenal addition has earned its rightful place: Grandbaby Cakes – Modern Recipes, Vintage Charm, Soulful Memories. This book transcends mere recipes; it’s an experience.

Discovering the Magic of Grandbaby Cakes by Jocelyn Delk Adams
For a cookbook to ascend to my exclusive third category, it needs to be more than just inspiring or visually appealing. It must possess an intrinsic quality that resonates deeply, evoking a powerful urge to rush into the kitchen and bring its pages to life. It needs to ignite a spark, a creative fire, and a sense of connection. Jocelyn Delk Adams’s *Grandbaby Cakes* did exactly that. From the moment I first opened its covers, I knew it belonged among my most coveted favorites, a true testament to its exceptional charm and culinary wisdom.
Grandbaby Cakes is a remarkable celebration of vintage recipes, lovingly curated from Jocelyn’s grandmother and interwoven with heartfelt family memories. Each recipe within its pages tells a story, often inspired by a beloved family member and meticulously passed down through generations. This particular 7UP Pound Cake recipe, for instance, has a rich lineage, traveling from her grandmother to her mother, and now, thanks to Jocelyn, to all of us eager home bakers. The book isn’t just a collection of instructions; it’s a treasure trove that shares the invaluable, intangible ingredient that elevates every homemade treat: a generous pinch of love.
What makes *Grandbaby Cakes* truly shine is Jocelyn’s brilliant ability to take classic Southern recipes, like traditional pound cakes and luscious peach cakes, and infuse them with a contemporary flair. Imagine a vibrant red velvet cake elevated with a luscious blackberry compote filling, or charming Neapolitan mini bundt cakes that perfectly blend tradition with modern artistry. This innovative approach makes the cookbook accessible and exciting for today’s bakers while honoring its roots. It’s a culinary journey that bridges generations, making it an absolute essential for any kitchen. I wholeheartedly urge you to experience its magic – grab your copy wherever cookbooks are sold, or easily order it online from Amazon.

The Magic of 7UP in Baking: Crafting the Perfect Moist Pound Cake
Flipping through *Grandbaby Cakes*, I found myself bookmarking an array of tantalizing recipes, making the choice of where to begin an incredibly difficult task. My heart was torn between Jocelyn’s legendary Real Deal Caramel Cake – because, honestly, who can resist the allure of rich, gooey caramel?! – and this intriguing 7UP Pound Cake. Ultimately, the pound cake won. Why? Because Jocelyn’s mama, a true matriarch of Southern baking, swears that the secret ingredient of soda delivers the most unbelievably moist cake imaginable! And let me tell you, she was absolutely right.
This isn’t just *a* pound cake; it is, without a doubt, the best pound cake I have ever tasted. The first bite reveals a remarkably soft, almost ethereal texture, followed by a delightful fluffiness that melts in your mouth. Its crumb is exquisitely tender, making each mouthful a pure joy. The subtle citrus notes from the 7UP beautifully complement the rich, buttery base, creating a perfectly balanced flavor profile that is both comforting and refreshing. It’s a nostalgic taste with a vibrant lift, a true testament to the simple genius of incorporating soda into a classic recipe. The carbonation from the 7UP soda, combined with its lemon-lime flavor, contributes to a lighter crumb and a unique moisture that sets this pound cake apart from any other.

MAMA’s 7UP Pound Cake
30 minutes
1 hour 25 minutes
1 hour 55 minutes
Ingredients
For the Cake:
- 3 cups granulated sugar
- 2 teaspoons lemon zest
- 1 ½ cups unsalted butter (3 sticks), room temperature
- 1 teaspoon salt
- 5 large eggs, room temperature
- 3 cups sifted cake flour
- ½ cup 7UP soda, room temperature
For the Glaze:
- 1 cup confectioner’s sugar
- 3 tablespoons 7UP soda
- ½ teaspoon lemon extract
Instructions
For the Cake:
- Preheat your oven to 325 degrees F (160 degrees C). Generously spray a 10-cup bundt pan with a nonstick baking spray, ensuring all crevices are coated. This helps prevent sticking and ensures a beautiful release.
- In the large bowl of a stand mixer, combine the granulated sugar with the fresh lemon zest. Using your fingertips, gently rub the zest into the sugar until it becomes wonderfully fragrant and evenly distributed. This technique releases the essential oils from the zest, infusing the sugar with intense lemon flavor.
- Add the softened unsalted butter and salt to the sugar mixture in the bowl. Cream these ingredients together on medium-high speed for a full 7 minutes. Beat until the mixture is visibly pale yellow and boasts a light, fluffy texture. This creaming process incorporates air, crucial for a tender pound cake. Add the large eggs, one at a time, beating well after each addition until fully incorporated. Remember to scrape down the sides of the bowl with a spatula as needed to ensure everything is evenly mixed.
- Reduce the mixer speed to low. Gradually add the sifted cake flour in two batches, mixing each time only until just combined. It’s important not to overmix at this stage, as overmixing can develop the gluten in the flour too much, leading to a dense or tough cake.
- Finally, pour in the room temperature 7UP soda and mix gently until it is just combined into the batter. Again, avoid overmixing. The slight carbonation and acidity from the 7UP contribute to the cake’s signature moistness and tender crumb.
- Carefully pour the prepared batter into your greased bundt pan. Bake for 75-85 minutes, or until a wooden toothpick inserted into the center of the cake comes out clean. Baking times can vary, so keep an eye on it.
- Allow the baked cake to cool in the bundt pan for at least 10 minutes before carefully inverting it onto a wire rack or serving plate. Let it cool completely to room temperature before applying the glaze. This prevents the glaze from melting off.
For the Glaze:
- In a small mixing bowl, whisk together the confectioner’s sugar, 7UP soda, and lemon extract. Continue whisking until the mixture is smooth and has a pourable consistency. If it’s too thick, add a tiny bit more 7UP; if too thin, a bit more confectioner’s sugar.
- Once the pound cake is completely cool, generously spoon the prepared glaze evenly over the entire cake. Allow the glaze to set and harden slightly before slicing and serving. This creates a beautiful, sweet, and slightly tangy finish.
