Ingredients

For the cake:

For the frosting:

  • 2 cups (4 sticks) unsalted butter, softened
  • 1 pound (about 4 cups) powdered sugar, sifted
  • 1/2 teaspoon fine sea salt
  • 1/4 cup heavy cream
  • 2 teaspoons pure vanilla extract
  • Gel food coloring (in your desired rainbow colors)

Instructions

For the Cake:

  1. Prepare and bake your favorite strawberry cake recipe according to its specific directions. Whether you opt for a homemade recipe or a convenient box mix, ensure your cake layers are thoroughly cooled to room temperature before you begin the frosting process. This prevents melting and ensures a stable structure.

For the Frosting:

  1. In the bowl of a powerful stand mixer fitted with the paddle attachment, beat the softened unsalted butter on medium-high speed for a full 6 minutes. This crucial step incorporates air, transforming the butter into an incredibly light and fluffy consistency, which is vital for an airy buttercream. Reduce the speed to low, then gradually add in the sifted powdered sugar, salt, heavy cream, and vanilla extract. Mix for about 1 minute, or until all the ingredients are just combined and no dry sugar remains. Increase the speed back to medium-high and continue to beat the frosting for another 5 minutes. The goal is a frosting that is truly fluffy, light, and almost whipped-cream like in texture, perfect for piping.
  2. Divide the prepared buttercream into several separate mixing bowls, one for each color you plan to use in your rainbow design. It’s often a good idea to reserve about 1 to 2 cups of plain white frosting for filling the cake layers and applying a thin crumb coat. To each bowl of frosting, add one to two drops of your chosen gel food coloring. Gel colors are preferred as they provide vibrant hues without adding excess liquid. Mix each bowl until a uniform, bright color is achieved.
  3. Begin by using the reserved plain white frosting to generously fill between your cooled cake layers and then apply a very thin, even layer of frosting over the entire cake to create a crumb coat. This seals in any loose crumbs. Chill the cake in the refrigerator for 15-20 minutes, allowing the crumb coat to set. Once chilled, fit a piping bag with a Wilton tip 1M (or a similar star tip like tip 21). Starting with your darkest or preferred base color, pipe continuous rosettes or swirls around the base of your cake, forming the first row. Repeat this process with your remaining colored frostings, working upwards in horizontal rows. Alternate colors as desired, creating a beautiful gradient or distinct rainbow bands until the entire cake is magnificently covered in vibrant, swirling rosettes.
