Decadent Ferrero Rocher Cupcakes with Creamy Nutella Frosting

Hello fellow baking enthusiasts! While I’m currently navigating a busy period finishing up school, a delectable treat from my archives simply couldn’t wait any longer to be shared. It’s been a whirlwind of a few weeks, but soon enough, my baking hiatus will conclude, and trust me, there are many exciting recipes on the horizon – prepare for an abundance of pies next month!

In the spirit of sharing some of my all-time favorite creations, we’re diving into a true classic that consistently wows: Ferrero Rocher Cupcakes. These aren’t just any cupcakes; they are an experience, offering a perfect blend of rich chocolate, crunchy hazelnut, and an irresistible creamy frosting. Forget your average dessert – these are designed to impress and satisfy even the most discerning chocolate lovers.

The Inspiration Behind the Indulgence

Perfectly baked Ferrero Rocher Cupcakes

The story of these Ferrero Rocher Cupcakes began last month, sparked by a special request for my sister-in-law’s birthday. She sent me a picture of some stunning Ferrero Rocher Cupcakes she’d seen on Instagram and asked if I could recreate them. My answer? An enthusiastic, “Yes, of course!” I relish the challenge of transforming inspiration into a tangible, delicious reality, especially when it involves such a beloved confection.

Upon researching similar recipes on Pinterest, a common theme emerged: a rich chocolate cupcake, a Ferrero Rocher nestled secretly within, and a generous swirl of Nutella frosting on top. This straightforward yet brilliant concept allowed me to put my own spin on it. I decided to build upon my tried-and-true dark chocolate cupcake recipe, which consistently delivers a moist, tender, and intensely chocolatey base, providing the perfect canvas for this luxurious treat.

Crafting the Perfect Chocolate Cupcake Base

The foundation of an extraordinary cupcake is, without a doubt, an exceptional base. For these Ferrero Rocher Cupcakes, we start with a rich, moist, and intensely flavored dark chocolate cupcake. This recipe is designed to produce a tender crumb and a deep chocolate profile that beautifully complements the hazelnut and chocolate notes of the Ferrero Rocher. The careful balance of cocoa powder, buttermilk, and even a touch of hot coffee works magic, enhancing the chocolate flavor while ensuring incredible moisture and a light texture.

Using high-quality cocoa powder, such as Ghirardelli, makes a noticeable difference in the final taste, imparting a sophisticated bitterness that rounds out the sweetness. Buttermilk contributes to the cupcake’s tenderness and moistness, reacting with the baking soda to create a light and airy structure. And the hot black coffee? It’s not for a caffeine kick, but rather a secret ingredient that deepens and intensifies the chocolate flavor without adding any coffee taste itself. These elements combine to form a cupcake that is rich, flavorful, and incredibly satisfying on its own, making it the ideal vessel for our hidden surprise.

The Irresistible Hidden Ferrero Rocher Surprise

Adding a Ferrero Rocher to the cupcake batter for a delightful surprise.

The real magic of these cupcakes lies in their delightful secret: a whole Ferrero Rocher baked right into the center! The process is surprisingly simple, yet the payoff is immense. Once you’ve filled your cupcake liners halfway with the rich chocolate batter, gently unwrap a Ferrero Rocher and nestle it into the center of each. You might consider freezing the chocolates beforehand, though it’s not strictly necessary, as they hold their shape beautifully during baking, maintaining their delicate crunch and creamy filling.

After placing the Ferrero Rocher, top it off with a bit more batter, filling each liner to about two-thirds full. Don’t worry if the chocolate isn’t completely covered; it will beautifully sink and settle into the batter as it bakes, creating that perfect hidden gem. The cupcakes will bake up much like any other, perhaps with a slight indent in some, but for the most part, no one will know the decadent surprise awaiting them until they take that first glorious bite. The melted chocolate and hazelnut goodness infuse the cupcake from within, elevating its flavor and adding an incredible textural dimension.

The Dreamy Whipped Nutella Cream Cheese Frosting

Baked Ferrero Rocher cupcakes, ready for frosting.

No decadent cupcake is complete without an equally exquisite frosting, and for our Ferrero Rocher masterpieces, we crown them with a heavenly whipped Nutella cream cheese frosting. This isn’t just a simple Nutella buttercream; the addition of cream cheese lends a beautiful tang and lightness, cutting through the richness of the chocolate and Nutella, preventing it from being overly sweet. It’s truly a match made in dessert heaven.

The frosting is incredibly light and creamy, making it easy to pipe and creating a luxurious mouthfeel that melts in your mouth. The combination of softened butter, cream cheese, creamy Nutella, confectioners’ sugar, vanilla extract, and a touch of heavy cream whips up into a cloud-like consistency that is both rich in flavor and wonderfully airy. It perfectly complements the intense chocolate and hazelnut core of the cupcake, bringing together all the elements into a harmonious and unforgettable bite. A final touch of chopped hazelnuts or even a mini Ferrero Rocher on top can elevate these already spectacular cupcakes to an even higher level of elegance and indulgence.

The resulting cupcakes are truly AMAZING – among my absolute favorites to share on the blog. They are undeniably decadent, celebrating everything a chocolate lover could wish for. Each bite offers a symphony of textures and flavors: the moist chocolate cake, the surprising crunch and gooey center of the Ferrero Rocher, and the silken embrace of the Nutella cream cheese frosting. These aren’t just desserts; they’re an experience, perfect for birthdays, special gatherings, or simply treating yourself to something truly extraordinary.

Ingredients

For Chocolate Cupcakes:

  • 1 cup all-purpose flour
  • 1 cup sugar
  • ⅓ cup Cocoa powder (I used Ghirardelli)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 egg, at room temperature
  • ½ cup buttermilk, at room temperature
  • ½ cup strong black coffee, hot
  • ¼ cup vegetable oil
  • 1½ teaspoons vanilla extract
  • 12 Ferrero Rochers, unwrapped (optional: frozen)

For Nutella Frosting

  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 4 ounces cream cheese, room temperature
  • ½ cup Nutella
  • 2-3 cups confectioners’ sugar, sifted
  • 2 teaspoons pure vanilla extract
  • Pinch of salt
  • 2-3 tablespoons heavy cream

Instructions

For the Cupcakes:

  1. Preheat oven to 350°F (175°C). Line muffin tins with cupcake liners.
  2. In the bowl of an electric mixer, sift together all the dry ingredients: flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate medium bowl, whisk together all the wet ingredients: egg, buttermilk, hot coffee, vegetable oil, and vanilla extract.
  4. With the mixer on low speed, gradually add the wet ingredients to the dry ingredients. Mix for 1 minute until just combined. Scrape down the sides and bottom of the bowl, then mix for another 2 minutes on medium speed until the batter is smooth. The batter will be thin.
  5. Fill each cupcake liner halfway with the batter. Gently drop one unwrapped Ferrero Rocher into the center of the batter in each liner. Top with more batter, filling each liner up to two-thirds full. Do not overfill.
  6. Bake for 12-15 minutes, or until a toothpick inserted into the cake portion (avoiding the Ferrero Rocher) comes out with moist crumbs but not wet batter.
  7. Allow the cupcakes to cool completely on wire racks before frosting. This is crucial for the frosting to set properly.

For Nutella Frosting:

  1. In the bowl of a stand mixer fitted with the paddle attachment, whip the softened butter and cream cheese on medium speed for 2-3 minutes until the mixture is light, fluffy, and creamy.
  2. Add the Nutella and beat until fully incorporated and smooth.
  3. Gradually add the sifted confectioners’ sugar, vanilla extract, and pinch of salt. Mix on low speed for 1 minute until combined.
  4. Increase the speed to medium-high and whip for an additional 2-3 minutes, adding heavy cream one tablespoon at a time until the frosting reaches your desired light and airy consistency.
  5. Once the cupcakes are completely cool, frost them generously with the Nutella frosting. For an extra touch, garnish with an additional Ferrero Rocher or chopped hazelnuts on top.
