Fireside S’mores Cupcakes

Smores Cupcakes - A Delicious Summer Dessert

As the sun bathes the days in golden light and the aroma of barbecue fills the air, summer inevitably calls for those iconic, nostalgic treats that define the season. For many, that quintessential summer experience is gathering around a crackling campfire, roasting marshmallows, and assembling gooey s’mores. But what if you could capture all that magic—the rich chocolate, the crisp graham cracker, and the perfectly toasted marshmallow—into a convenient, decadent, and utterly irresistible cupcake? Welcome to the world of these incredible S’mores Cupcakes, your new favorite way to celebrate summer without needing a single flicker of flame.

It’s true, I almost let another summer slip by without indulging in the classic s’mores experience. After spotting a friend’s mouth-watering s’mores cupcake on Instagram, a serious craving hit, and I knew I had to create my own rendition. What better way to test a new recipe than at a family cookout? My in-laws were the perfect taste testers for this ambitious project, and I’m thrilled to report that these cupcakes were met with enthusiastic, indeed, raving reviews. The cake carrier returned home completely empty, a testament to their undeniable appeal!

So, why were they such a monumental hit? The answer is simple: pure decadence. These aren’t just any cupcakes; they are an experience. They embody everything you love about the classic s’more, elevated to gourmet status, offering a symphony of textures and flavors that will transport your taste buds straight to dessert heaven.

Moist Chocolate Smores Cupcakes

If you’re seeking a dessert that is light, subtle, or overly virtuous, then these S’mores Cupcakes might not be your ideal match. But if you crave a moist, intensely chocolatey cupcake, crowned with a cloud of creamy chocolate frosting, sprinkled with buttery graham cracker crumbs, and topped with a beautifully toasted marshmallow, then prepare to fall in love. We start with my tried-and-true, super decadent chocolate cake recipe, which forms the perfect foundation. This recipe guarantees an incredibly moist crumb and a deep, rich chocolate flavor that truly stands out. It’s the kind of chocolate cake that makes you close your eyes in bliss with every bite.

The beauty of these cupcakes lies in their harmonious layers. Each component plays a crucial role in delivering that authentic s’mores flavor. The base is an unbelievably moist chocolate cupcake, rich and tender. Next, a generous swirl of luscious whipped chocolate frosting adds another layer of cocoa delight, creamy and smooth, melting in your mouth. Then comes the satisfying crunch and distinct flavor of finely crushed graham crackers, scattered like edible confetti. And finally, the crown jewel: a fluffy marshmallow, perfectly toasted to golden perfection, its edges slightly caramelized and its center gooey. One bite, and you’ll find yourself in s’mores heaven, no campfire required.

Smores Cupcakes with Toasted Marshmallow

A small disclaimer, but one born of pure preference: these cupcakes are intentionally a little light on the graham cracker component. My personal desire was to emphasize the rich chocolate flavor, letting it take center stage while the graham cracker crumbs provide a delightful textural contrast and a hint of their unique taste rather than being overwhelming. However, if you’re a devout graham cracker enthusiast, don’t fret! A popular method for increasing the graham cracker presence is to press a thin layer of crumbs into the bottom of the cupcake liners before adding the batter. This creates a distinct graham cracker crust that some find absolutely irresistible. Ultimately, in my humble opinion, these cupcakes strike the perfect balance, offering the ideal combination of deep chocolate, sweetly toasted marshmallow, and just enough graham cracker to complete the classic s’mores experience. They truly capture the best of s’mores flavors in every single bite.

These S’mores Cupcakes have officially claimed the top spot as my new favorite cupcake recipe on the blog. It’s a significant achievement, considering they’ve even surpassed my beloved pink velvet cupcakes, which have held that coveted position for years. That’s how good they are – a game-changer in the world of celebratory desserts.

Tips for Crafting the Perfect S’mores Cupcakes

To ensure your S’mores Cupcakes turn out as spectacular as they sound, here are some essential tips for each stage of the baking process:

For the Cupcakes:

  • Room Temperature Ingredients: Always ensure your wet ingredients like buttermilk and eggs are at room temperature. This helps them emulsify better with the other ingredients, leading to a smoother batter and a more even, tender crumb.
  • Don’t Overmix: Overmixing develops the gluten in the flour, resulting in tough cupcakes. Mix just until the ingredients are combined. A few small lumps are perfectly fine!
  • Quality Cocoa: Use a good quality unsweetened natural cocoa powder. It makes a significant difference in the depth of chocolate flavor.
  • Hot Coffee: The hot coffee in the recipe isn’t just for moisture; it enhances the chocolate flavor without making the cupcakes taste like coffee. It’s a secret weapon for rich chocolate desserts!
  • Fill Correctly: Fill cupcake liners about two-thirds to three-quarters full. This allows them to rise beautifully without overflowing.
  • Don’t Overbake: Cupcakes bake quickly. Keep a close eye on them towards the end of the baking time. A toothpick inserted into the center should come out with moist crumbs, not wet batter. Overbaked cupcakes are dry cupcakes.

For the Frosting:

  • Softened Butter: Just like with the cupcakes, ensure your unsalted butter is properly softened—not melted, but pliable enough to make a slight indent with your finger. This is crucial for a smooth, fluffy frosting.
  • Whip the Butter: Don’t skip the step of whipping the butter on its own for several minutes. This incorporates air, making the frosting light and creamy, and helps it turn a pale color.
  • Sift Powdered Sugar: Sifting your powdered sugar before adding it to the butter will prevent lumps and ensure a super smooth frosting texture.
  • Melted Chocolate: Allow your melted semi-sweet chocolate to cool slightly before adding it to the frosting. If it’s too hot, it can melt the butter and cause the frosting to separate.
  • Adjust Consistency: If your frosting is too thick, add a tiny bit more heavy cream, a teaspoon at a time. If it’s too thin, add a bit more sifted powdered sugar.

Assembly and Toasted Marshmallows:

  • Cool Completely: Frosting warm cupcakes is a recipe for disaster! Ensure your cupcakes are completely cool before you even think about frosting them.
  • Crushing Graham Crackers: You can crush graham crackers by hand, in a food processor, or by placing them in a zip-top bag and crushing with a rolling pin. Aim for fine crumbs with a few slightly larger pieces for texture.
  • Toasting Marshmallows: The key to beautifully toasted marshmallows without a campfire is your broiler! Place marshmallows on a baking sheet lined with parchment paper. Watch them *very* carefully, as they can go from perfectly golden to burnt in seconds. A kitchen torch also works wonderfully for more precise toasting.
  • Serve Freshly Toasted: While the cupcakes can be made ahead, the marshmallows are best toasted and added just before serving for that ultimate gooey, warm experience.

Variations to Make These S’mores Cupcakes Your Own

While the classic S’mores Cupcakes are undeniably perfect, feel free to get creative and personalize them:

  • Chocolate Drizzle: A final drizzle of melted chocolate or chocolate syrup over the toasted marshmallow adds an extra touch of elegance and chocolatey goodness.
  • Mini Chocolate Chips: Fold some mini chocolate chips into the cupcake batter for an even more intense chocolate experience.
  • Smoked Salt: A tiny sprinkle of smoked sea salt on top of the toasted marshmallow or in the chocolate frosting can enhance the “campfire” flavor and balance the sweetness.
  • Different Marshmallows: Experiment with gourmet marshmallows if you can find them, perhaps a vanilla bean or chocolate variety.
  • Graham Cracker Crust: As mentioned, for more graham cracker flavor, press a tablespoon of crushed graham crackers mixed with a little melted butter into the bottom of each cupcake liner before adding batter.

I know you’re going to love these as much as my family and I did. They are the ultimate summer treat, easy to make, shareable, and packed with irresistible flavor. Let me know when you try them!

Keep summering and baking!

Ingredients

For Cupcakes

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/3 cup unsweetened Natural Cocoa Powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup buttermilk
  • 2 large eggs, lightly beaten
  • ¼ cup vegetable oil
  • ½ cup hot coffee

For Frosting

  • 1 ½ cups (3 sticks) unsalted butter
  • 4 cups powdered sugar
  • 2 tablespoons heavy cream
  • ½ cup semi-sweet baking chocolate, melted and cooled
  • ½ cup unsweetened cocoa powder

Assembly:

  • 2 graham crackers, finely crushed
  • 12-15 marshmallows

Instructions

To make cupcakes:

  1. Preheat oven to 350 degrees F. Line muffin tins with 12-15 cupcake liners.
  2. Sift together all the dry ingredients (flour, sugar, cocoa powder, baking soda, baking powder, salt) into the bowl of an electric mixer. This ensures no lumps and an even distribution of leavening agents.
  3. In a separate medium bowl, whisk together all the wet ingredients (buttermilk, eggs, vegetable oil, hot coffee) until well combined.
  4. With the mixer on low speed, gradually add half of the wet ingredients to the dry ingredients and mix for 1 minute. Stop the mixer, scrape down the sides and bottom of the bowl to ensure everything is incorporated. Add the remaining wet ingredients and mix for an additional minute on medium speed. The batter will be thin, which is normal for this incredibly moist cupcake. Using a medium cookie scoop, divide the batter evenly among the cupcake liners, filling each about ¾ of the way.
  5. Bake cupcakes for 12-15 minutes, or until a toothpick inserted into the center comes out almost clean with just a few moist crumbs clinging to it. Immediately remove the cupcakes from the muffin tins and transfer them to wire racks to cool completely. This prevents them from becoming soggy. You can begin preparing the frosting while the cupcakes cool.

To make frosting:

  1. In the bowl of an electric mixer fitted with the paddle attachment, whip the softened unsalted butter on medium speed for a full 8 minutes. This long whipping time is crucial; it aerates the butter, making it pale, light, and wonderfully creamy.
  2. Reduce the mixer speed to low and gradually add the powdered sugar and heavy cream. Mix for 1 minute until just combined. Then, increase the speed to medium-high and beat for 2-3 minutes until the frosting is incredibly light, creamy, and fluffy. Finally, add the cooled melted chocolate and cocoa powder, mixing until everything is well combined and the frosting is uniformly chocolatey.

Assembly:

  1. Once the cupcakes are completely cooled, frost them generously using your favorite decorating tip. For these S’mores Cupcakes, I recommend Wilton Tip 1M for a beautiful, swirled effect.
  2. Evenly sprinkle the crushed graham crackers over the frosted cupcakes. This adds a delightful crunch and authentic s’mores flavor.
  3. Prepare the marshmallows for toasting. You can place the marshmallows on a baking sheet lined with parchment paper. Broil them on high for a very short time (15-30 seconds), watching constantly, until they are slightly charred and beginning to melt. Alternatively, use a kitchen torch for more control.
  4. Carefully place one toasted marshmallow on top of each cupcake. For an extra touch of indulgence, drizzle with a little chocolate syrup just before serving. Enjoy your homemade S’mores Cupcakes!
