  • 2 ripe avocados
  • 3 tablespoons coconut oil, melted
  • 3 tablespoons pure maple syrup (or honey, if not strict vegan)
  • ¼ cup lime juice (preferably key lime for authentic flavor)

Instructions

  1. Prepare Baking Pan: Line an 8×8 inch baking pan with foil, ensuring some overhang on the sides for easy removal. This step helps in lifting the set bars out cleanly. Set the prepared pan aside.
  2. Make the Wholesome Crust Base: In the bowl of a food processor, combine the old-fashioned oats, unsweetened coconut flakes, and raw almonds. Pulse these ingredients until the mixture is finely chopped and achieves a texture resembling coarse meal. Be careful not to over-process into a paste.
  3. Form the Delicious Crust: Add the pure maple syrup (or honey, if preferred and not strictly vegan), the two tablespoons of melted coconut oil, and the key lime juice to the food processor with the dry crust ingredients.
