- 1/4 cup all-purpose flour
For Topping:
- 1 cup cold heavy cream
- 1 teaspoon coconut extract
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Grease a Nonstick 9” x 9” Square Pan (or 8×8 square pan) with baking spray, line with parchment paper leaving an overhang on two sides for easy removal, and grease the parchment paper with baking spray.
- In the bowl of a food processor, combine all the dry ingredients for the crust: all-purpose flour, powdered sugar, cornstarch, salt, and unsweetened coconut flakes. Pulse until well combined. Add the cold, cubed unsalted butter pieces and pulse until the crust mixture starts to come together and resembles wet sand or coarse crumbs.
- Turn the dough mixture out into the prepared pan. Using your fingers, press evenly and firmly into the bottom of the pan to form a compact crust. Ensure it’s evenly distributed for consistent baking.
