Crafting Inclusive Delights: The Inspiration Behind This Gluten-Free Tart

As the resident baker and passionate recipe developer, my greatest joy comes from creating and testing new culinary delights to share with you all. However, I understand the challenges of modern kitchens, where diverse dietary needs often call for innovative solutions. It’s certainly a task to develop a unique recipe for every single dietary restriction out there. Consequently, many of my creations naturally fall into one or two specific categories. Yet, what truly fuels my motivation is your continuous enthusiasm and invaluable feedback, especially your requests for more variations. This constant interaction inspires me to push boundaries and explore new possibilities in the kitchen.

In response to this wonderful feedback, I’m thrilled to share how accessible gluten-free baking has become. Thanks to the exceptional gluten-free 1-to-1 baking flour from Bob’s Red Mill, I’ve discovered a straightforward path to convert many of my cherished recipes into gluten-free versions. This journey began with adapting my signature buttery, flaky tart crust – the very foundation of this spectacular Apple Almond Tart.

The Foundation: A Flawless Gluten-Free Tart Crust

In my culinary philosophy, truly great things, especially in the realm of baking, always begin with a stellar crust. It’s the essential starting point that promises a delightful experience, and this Gluten-Free Apple Almond Tart is no exception. For this recipe, I’ve taken my beloved go-to tart crust recipe and effortlessly transformed it into a gluten-free marvel. The secret lies in a simple substitution: replacing traditional all-purpose flour with Bob’s Red Mill 1-to-1 Gluten-Free Baking Flour.

This particular flour is an absolute game-changer for anyone navigating gluten-free diets without wanting to compromise on taste or texture. What I adore most about this product is its ingenious blend that eliminates the need for any obscure, specialty ingredients or complex modifications to your existing recipes. It truly lives up to its “1-to-1” name, allowing you to seamlessly swap it in for wheat flour in a vast array of baked goods. From delicate cookies and rich cakes to fudgy brownies and fluffy muffins, this flour ensures that your favorite recipes remain just as delicious and satisfying, simply without the gluten. It guarantees a golden, tender, and irresistibly flaky tart shell every single time.

A Medley of Flavors: Apples, Almonds, and Cranberries

Once you’ve mastered the art of the perfect gluten-free crust, it’s time to fill it with an enchanting blend of autumnal flavors. This golden crust cradles a luscious almond paste, which provides a rich, slightly sweet, and wonderfully nutty base. Layered generously on top are fresh, thinly sliced apples, meticulously arranged to create a visually stunning pattern. Each slice is interspersed with vibrant, tart cranberries, adding beautiful splashes of color and a zesty contrast to the sweetness of the apples and richness of the almond.

You might be wondering if apple recipes are behind us as we move into the cooler months. Absolutely not! November, and indeed the entire fall season, still offers an abundance of juicy, flavorful apples, and this tart is an exquisite way to celebrate them. The harmonious combination of the tender, flaky crust, the decadent almond paste (with an optional hint of warming bourbon for added depth), the sweet, softened apples, and the bright tang of cranberries creates a truly exceptional dessert experience. It’s a delightful balance that keeps every bite exciting and leaves a lingering warmth, making it the quintessential fall and holiday treat.

The Perfect Finish: Serving Your Holiday Tart

What elevates this already perfect tart to sheer bliss? A generous scoop of creamy vanilla ice cream, melting gently over a warm slice. The cold, smooth ice cream against the tender, fruity, and nutty tart is a match made in heaven, transforming each bite into a luxurious indulgence. Some might even say it’s an elegant, deconstructed apple pie in a slice – all the comforting flavors you adore, presented with a refined twist.

Ingredients

For Crust:

  • 1¼ cup Bob’s Red Mill 1-to-1 Gluten-Free Baking Flour (Or all-purpose flour)
  • 3 tablespoons cold vegetable shortening
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 5 tablespoons cold unsalted butter, cut into cube sized (use a dairy-free butter like Earth Balance to make recipe dairy-free)
  • 1 cup almond flour
  • 4 tablespoons unsalted butter, cut into cube sized and at room temperature
  • ¼ cup brown sugar
  • 1 large egg
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon bourbon (optional)
  • A pinch of salt
  • 2-3 medium apples (I used Cortlands), peeled, cored and sliced into thin slices
  • A handful of cranberries (fresh or frozen), about 2 tablespoons
  • 2 tablespoon turbinado sugar
  • Vanilla ice cream, to serve

Instructions

To make the crust:
  1. Prepare ¼ cup ice-cold water and keep in fridge. In a food processor, pulse the flour, shortening, sugar and salt until combined. Add in half of the butter and pulse for 30 seconds. Add in the rest of butter and pulse until the mixture looks like coarse meal. Sprinkle about 2 tablespoons cold water over mixture and pulse until dough starts to come together in clumps. If dry, add a little bit more water (1 teaspoon at a time). Remove dough from processor and form into a disk. Wrap in plastic wrap and chill for at least an hour. The dough can be made up to 3 days ahead. Keep chilled. Let stand at room temperature about 15 minutes before rolling out.
  2. Roll out dough on a lightly floured surface and fit into a long rectangular tart pan with a removable bottom. Press the dough into the bottom and up the sides. (Alternatively, just press dough into the bottom and up the sides of the pan). Chill for at least 30 minutes.
  3. Preheat oven to 375 degrees F.
To make filling:
  1. In the bowl of a food processor or stand mixer, mix together the almond flour, butter, sugar, egg and cinnamon. Pulse until well combined. Drizzle in the bourbon and mix.
  2. Spread a thin layer of the almond mixture across the bottom of the prepared tart shell. Arrange sliced apples gently onto paste. Layer apples tightly together. Fill in gaps with cranberries.
  3. Sprinkle with turbinado sugar. Bake tart until golden brown, about 50-60 minutes.
  4. Transfer tart to a cooling rack and let cool completely before slicing up. Serve slices with a scoop of vanilla ice cream or whipped cream

Tips for Baking the Best Apple Almond Tart

Achieving a show-stopping tart is easier than you think with a few simple tips. Firstly, ensure all your crust ingredients, especially the butter and shortening, are very cold. This is crucial for creating those coveted flaky layers. Don’t overwork the dough; handle it just enough to bring it together to prevent a tough crust. When slicing your apples, aim for uniform thinness – this ensures they cook evenly and present beautifully. Experiment with different apple varieties; Cortlands offer a great balance of sweetness and tartness, but Honeycrisp or Granny Smith also work wonderfully. Finally, allow the tart to cool completely before slicing. This patience is key for the filling to set properly, resulting in clean, elegant slices ready for serving.
