For those unfamiliar, Mystery Dish is a fantastic culinary collaboration where a host selects a diverse list of ingredients, and participants are tasked with creating an original recipe using a minimum of three items from the list. It’s a wonderful way to spark creativity, explore new ingredient combinations, and push the boundaries of conventional cooking.

This month, our gracious host, Jen from Yummy Healthy Easy, curated an incredibly inspiring list that immediately got my culinary gears turning. The ingredients for this round included: garbanzo beans, eggs, flaxseed, cilantro, potatoes (any variety), bread, quinoa, lime, popcorn, dark chocolate, ground turkey, and asparagus. As soon as I saw the list, I knew exactly how I wanted to tackle it. My vision was clear: to craft a healthier, more vibrant rendition of my all-time favorite fried rice recipe, elevating it with the nutritional power of quinoa and the refreshing tang of lime.

Ingredients

  • 1 cup uncooked quinoa
  • 2 cup low sodium chicken stock or water
  • 1 tablespoon coconut oil
  • 1 lime, juiced and zest
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 5 tablespoons coconut oil, divided
  • ½ red bell pepper, chopped
  • ½ orange bell pepper, chopped
  • ½ sweet onion, chopped
  • 4 garlic cloves, minced
  • ½ teaspoon freshly grated ginger
  • 2 cups cubed pineapple
  • 2 large eggs, lightly beaten
  • 1 ½ tablespoons low-sodium soy sauce
  • 4 green onions
  • ½ cup cashews
  • ¼ cup cilantro, chopped

Instructions

  1. Prepare the Quinoa: In a medium saucepan, combine the uncooked quinoa and chicken stock (or water). Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot tightly, and let it simmer until all the liquid is absorbed, which typically takes about 15 minutes. Once cooked, stir in 1 tablespoon of coconut oil, the juice and zest of one lime, and season with ½ teaspoon of salt and ½ teaspoon of pepper. This infuses the quinoa with a delightful citrus-coconut flavor. Allow the quinoa to cool completely before proceeding; this step can be done several hours or even the day before.
  2. Sauté the Vegetables and Pineapple: Heat 1 tablespoon of coconut oil in a large wok over medium heat. Add the chopped onions and bell peppers, and cook until they soften, about 2 minutes. Stir in the minced garlic and freshly grated ginger, cooking for an additional minute until fragrant. Transfer these sautéed vegetables to a separate bowl. Increase the heat slightly in the same wok and add another tablespoon of coconut oil. Add the cubed pineapple and cook, stirring occasionally, until the pineapple turns golden and slightly caramelized, which usually takes 5-6 minutes. Add the cooked pineapple to the bowl of veggies.
  3. Scramble the Eggs: Add ½ tablespoon of coconut oil to the wok. Pour in the lightly beaten eggs and cook, stirring gently to scramble and break them into small pieces. Cook for about a minute until just set, then transfer the scrambled eggs to a small, separate bowl.
  4. Combine and Finish: Increase the heat to high. Add the remaining 2 ½ tablespoons of coconut oil to the wok. Once hot, add the cooled quinoa and stir to ensure each grain is coated in the oil. Allow the quinoa to sit undisturbed for 1-2 minutes to develop a crispy texture. Stir to break up any clumps. Reduce the heat once the quinoa is crispy and golden. Stir in the low-sodium soy sauce. Re-introduce the sautéed vegetables and pineapple to the wok, stirring well to combine. Finally, fold in the scrambled eggs, chopped green onions, fresh cilantro, and cashews. Taste and adjust seasoning with additional salt and pepper if needed. Serve immediately for the best flavor and texture.
