Ingredients

  • 7oz (200g) butternut squash, peeled and cubed
  • 2 tsp olive oil
  • Salt, to taste
  • 2 large handfuls of mixed salad leaves
  • A handful of chopped cilantro (coriander)
  • 1 apple, sliced
  • 2 tablespoons goji berries (I used nu3 goji berries)
  • 2 tablespoons pistachio nuts
  • For the Balsamic Vinaigrette:
  • 6 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp grainy mustard
  • 1 tsp brown sugar
  • Salt, to taste
  • Ground black pepper, to taste

Instructions

  1. Preheat oven to 350°F / fan assisted 160°C / 180°C / Gas Mark 4.
  2. In a bowl, mix the cubed butternut squash with 2 teaspoons of olive oil and a pinch of salt. Spread the squash in a single layer on a baking sheet and roast for up to 30 minutes, or until tender and lightly caramelized. Remember to turn the butternut squash at least once during roasting to ensure it cooks evenly on all sides.
  3. Once roasted, remove the butternut squash from the oven and allow it to cool completely.
  4. While the squash cools, prepare your salad. In a large serving bowl, start by layering the salad leaves and chopped cilantro. Next, add the cooled roasted butternut squash and sliced apple. Finally, sprinkle the goji berries and pistachio nuts over the top.
  5. To make the balsamic vinaigrette, combine all vinaigrette ingredients (6 tbsp olive oil, 2 tbsp balsamic vinegar, 1 tsp grainy mustard, 1 tsp brown sugar, salt, and ground black pepper) in a small bowl or jar. Whisk vigorously or shake until all ingredients are well combined and emulsified.
  6. Before serving, adjust the seasoning of the dressing if necessary. Drizzle as much of the delicious balsamic vinaigrette as you desire onto your assembled salad. Toss gently to combine and serve immediately.

Notes

You can pre-roast the butternut squash and store it in an airtight container in the fridge for up to 3-4 days. This makes assembly quick and easy for future meals.

Feel free to get creative with your vegetables! Carrots, sweet potatoes, or other varieties of squash can be wonderful substitutes for butternut squash in this recipe.

The balsamic vinaigrette is quite stable. Prepare a larger batch and store it in a jar in your pantry; it will last for at least a month without any loss of quality or flavor.
