Spoonful of Flour’s Signature Brown Butter Walnut Brownies

The past few weeks have been a whirlwind of activity, pulling me away from my beloved kitchen and into a vibrant, albeit hectic, schedule. My calendar was packed with back-to-back adventures, starting with an inspiring trip to New York City for Better Homes and Gardens’ Stylemaker event. Soon after, I immersed myself in my first ever blogging conference in Philadelphia – an incredible experience where I connected with fellow creators and gathered endless inspiration (photos from these exciting events are coming soon to the blog!).

While these trips were undeniably fun and enriching, balancing them with my life as a full-time student and dedicated blogger presents a unique challenge, especially when my baking time is typically confined to weekends. This tight schedule often means less time for developing new recipes and creating the content I love to share. Thankfully, the incredible community of blogging friends, particularly my dear friend Meghan, always steps in to lend a helping hand when I need it most. Her generosity and baking prowess are a true blessing, allowing this blog to continue bringing you delicious content even when my oven is temporarily quiet.

Meghan, the brilliant mind behind Spoonful of Flour, is not just a baker; she’s an artist whose desserts are as lovely to behold as they are delightful to taste. Our friendship blossomed online two years ago, rooted in a mutual, undeniable love for cupcakes. Anyone who visits her cupcake archives will immediately understand why I was so drawn to her work. However, it wasn’t until we met in person last summer that I truly realized the depth of our connection. We discovered we were indeed kindred spirits, dessert twins even, sharing an identical passion for decadent, yet wonderfully simple and everyday desserts. Her passion makes me seriously contemplate moving to Boston!

Today, Meghan has graciously stepped in to share a truly special recipe with you: her incredible Brown Butter Walnut Brownies. This recipe perfectly encapsulates her baking philosophy, offering a treat that is both indulgent and approachable, a delightful addition to any baker’s repertoire.

Rich, fudgy Brown Butter Walnut Brownies with a delightful crinkly top, cooling on a wire rack.

Hello, wonderful Blahnik Baker readers! I’m Meghan from Spoonful of Flour, and I am absolutely thrilled to be guest posting for Zainab today. I know she’s been incredibly busy with her recent travels and is just getting back into the rhythm of her kitchen, so I’m happy to step in and share something delicious. This past June, I had the pleasure of meeting Zainab in person when she visited Boston for a conference. From the moment we connected, we hit it off instantly! I had such a blast showing her around my beloved city, exploring some of my favorite local bakeries, and sharing countless cannoli. Our conversations flowed effortlessly, and it became clear that we share so many interests and passions, especially when it comes to all things sweet. If only I could convince her to make Boston a more frequent destination!

For those of you who believe there’s always room for one more brownie recipe in your life – and honestly, who doesn’t? – I am so excited to share my Brown Butter Walnut Brownies with you today. This recipe holds a special place in my heart, as it’s one I first baked several years ago and recently rediscovered. I was flipping through one of the many baking magazines I’ve accumulated in my apartment (a habit many fellow bakers can surely relate to!), and there it was, tucked away on a forgotten page. The moment I saw it, the delicious memories of these brownies came rushing back – their rich aroma, their perfect texture, and that unforgettable flavor. I immediately knew I had to bake them again, and more importantly, share this delightful recipe with all of you.

What makes these brownies truly special? It all starts with the magical addition of brown butter. If you’ve never experimented with brown butter, you are in for an absolute treat. The simple act of melting butter and continuing to cook it until the milk solids toast to a golden-brown hue transforms its flavor profile entirely. It develops a rich, nutty, almost caramel-like aroma that elevates any baked good it touches. In these brownies, brown butter infuses the chocolate base with an incredible depth, creating a sophisticated backdrop for the other ingredients.

Beyond the brown butter, these brownies are generously studded with chopped walnuts. Walnuts not only provide a delightful textural contrast with their satisfying crunch but also add their own distinct earthy and slightly bitter notes, which perfectly complement the sweetness of the chocolate. They contribute to a more complex flavor profile, making each bite an experience. The combination of rich chocolate, nutty brown butter, and the rustic charm of walnuts is simply irresistible.

But it’s not just about the flavor; the texture of these brownies is equally important. We’re aiming for that ultimate brownie experience: a wonderfully chewy interior that offers just the right amount of resistance, contrasting beautifully with a fudgy, almost gooey exterior. This combination ensures every square is satisfyingly dense and moist, never dry or cakey. They boast that coveted crinkly top that all great brownies should have, a sign of their perfect bake and luxurious texture.

These Brown Butter Walnut Brownies are more than just a dessert; they’re a comforting classic made extraordinary. They are ideal for any occasion, whether you need a quick pick-me-up, a crowd-pleasing dessert for a potluck, or a sweet treat to share with loved ones. They pair beautifully with a scoop of vanilla bean ice cream, a dollop of whipped cream, or simply a tall glass of cold milk. I absolutely adore them, and I’m confident you will too!

Thank you so much for having me here today, Zainab! It was a true pleasure.

Total Time
40 minutes

Yield: 1 (8×8 inch) pan

Ingredients

  • 10 tbsp (1¼ sticks) unsalted butter, cut into 1-inch pieces
  • 1¼ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 2 large eggs, chilled
  • ⅓ cup plus 1 tbsp all-purpose flour
  • 1 cup chopped walnuts

Instructions

  1. Preheat the oven to 325 degrees F (160°C). Line an 8×8 inch baking pan with aluminum foil, ensuring a 2-inch overhang on each side for easy removal. Spray the aluminum foil with non-stick cooking spray and set aside.
  2. Melt the butter in a medium saucepan set over medium heat. Continue to cook the butter, stirring occasionally, until it begins to bubble, foam, and the milk solids at the bottom turn a rich golden brown color, emitting a nutty aroma (this typically takes 5-8 minutes). Be careful not to burn it. Remove from the heat and immediately add the granulated sugar, unsweetened cocoa powder, 2 teaspoons of water, vanilla extract, and salt. Stir vigorously with a wooden spoon or spatula until the mixture is fully combined and smooth.
  3. Add the chilled eggs, one at a time, stirring well after each addition until fully incorporated. The mixture should become glossy. Gently fold in the all-purpose flour until just combined, being careful not to overmix. Finally, stir in the chopped walnuts until evenly distributed throughout the batter. Transfer the rich brownie mixture to the prepared baking pan, spreading it evenly.
  4. Bake for 25 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached, but not wet batter. Avoid overbaking, as this can lead to dry brownies. Allow the brownies to cool completely in the pan on a wire rack before lifting them out by the foil overhang and cutting into squares. Cooling completely ensures a perfect fudgy texture.
