Ingredients

For the Dough:

  • 4 1/2 cups bread flour
  • ½ cup granulated sugar
  • 1 tablespoon instant dry yeast
  • 1 tablespoon salt
  • 4 large eggs + 1 large egg yolk (cold)
  • 1 cup minus 2 tablespoons milk (cold)
  • 1 cup (2 sticks) unsalted butter, softened to room temperature

For the Filling:

  • ¾ cup (1 ½ stick) unsalted butter, melted
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 ½ tablespoons ground cinnamon
  • 1/8 teaspoon freshly grated nutmeg
  • 1/3 cup strawberry compote or jelly (compote can be made from fresh strawberries cooked down with some sugar)
  • 1 cup fresh strawberries, chopped
  • egg wash

For Vanilla Bean Icing:

  • 4 ounces cream cheese, at room temperature
  • 4 tablespoons unsalted butter, at room temperature
  • 1-2 cups powdered sugar (more or less to taste)
  • 2 teaspoons Rodelle Vanilla Bean Paste
  • ¼ cup heavy cream, plus more as needed.

Instructions

To make dough:

  1. Prepare the dough a day in advance of when you plan to bake the cinnamon rolls. In the bowl of an electric mixer fitted with a dough hook, combine the bread flour, granulated sugar, instant dry yeast, and salt. In a separate small bowl, whisk together the cold eggs, egg yolk, and cold milk. Add this wet mixture to the dry ingredients in the mixer. Mix on low speed until the ingredients come together and form a cohesive ball of dough. Increase the speed to medium and continue mixing for approximately 5 minutes until the dough becomes very smooth and elastic.
  2. With the mixer still running on medium-low speed, gradually add the softened unsalted butter, one tablespoon at a time. Ensure each piece of butter is fully incorporated into the dough before adding the next. Once all the butter has been added, continue mixing for an additional 3 minutes to further develop the dough’s texture and richness.
  3. Transfer the prepared dough to a large, well-greased bowl. Cover the bowl with plastic wrap or a clean kitchen towel and allow the dough to rise in a warm place for 1 to 1 ½ hours. Please note that this is a very enriched dough, so it may not expand as much as a leaner dough, but it will still develop flavor.
  4. Once the initial rise is complete, gently transfer the dough to a parchment-lined baking sheet. Using your hands, pat the dough into a rectangular shape, aiming for about 1-inch thickness. Cover the dough directly with plastic wrap to prevent a skin from forming, and then refrigerate it overnight. This slow, cold fermentation enhances the flavor and makes the dough easier to work with.
  5. On the day you plan to bake your cinnamon rolls, begin by preparing the filling. In a small bowl, combine the melted unsalted butter, brown sugar, granulated sugar, ground cinnamon, and freshly grated nutmeg. Stir until well combined. Let this mixture sit at room temperature while you prepare the dough for rolling.
  6. Lightly grease a 9 x 13-inch baking dish (or two 9 x 9-inch dishes if preferred). Remove the chilled dough from the refrigerator. Transfer the dough to a lightly floured work surface. It is crucial to keep the roll as tight as possible as you go to ensure well-formed rolls. Use your thumbs to help release any sticky dough from the surface and to tuck in any loose edges. Once completely rolled, use a sharp serrated knife to slice the roll into 1 ½ inch wide pieces. Carefully transfer these pieces to your prepared baking pan(s), leaving about a quarter of an inch of space between each roll to allow for expansion. Cover the baking dish with plastic wrap or a clean towel and let the rolls rise in a warm place at room temperature for at least 30 minutes, or until visibly puffed.
  9. Preheat your oven to 350 degrees F (175 degrees C). Gently brush the tops of the risen rolls with egg wash. Bake for 25-30 minutes, or until the tops are golden brown, and the filling is bubbly and slightly oozing, indicating they are thoroughly cooked through.
