Meyer Lemon Soufflé

Ingredients

  • 3 tablespoons all-purpose flour
  • 3/4 cup milk
  • 1/3 cup granulated sugar
  • 4 large egg yolks
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon Meyer lemon zest
  • 1 tablespoon Meyer lemon juice
  • 5 large egg whites
  • ⅛ teaspoon salt
  • 1 tablespoon granulated sugar
  • Powdered sugar (for serving)
  • Whipped cream or vanilla ice cream for serving

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Grease the inside of 4 6-ounce soufflé dishes or ramekins with baking spray or softened butter.
  3. In a medium saucepan, whisk the flour with a small amount of milk until a smooth paste forms. Gradually whisk in the remaining milk until fully combined. Add the granulated sugar and place the saucepan over medium-high heat. Stir continuously, bringing the mixture to a boil. Once boiling, continue stirring for an additional minute as the mixture thickens. Remove from heat and whisk for another minute to cool slightly. Whisk in the egg yolks, one by one, until fully incorporated. Stir in the softened butter, pure vanilla extract, Meyer lemon zest, and Meyer lemon juice. Whisk until all ingredients are well combined.
  4. In a separate large, clean bowl, beat the egg whites and salt with an electric mixer until soft peaks form. With the mixer still running, gradually sprinkle in the additional tablespoon of granulated sugar and continue beating until stiff, glossy peaks form.
  5. Gently stir half of the whipped egg whites into the lemon mixture until just combined. Then, carefully fold in the remaining egg whites using a spatula, being careful not to deflate the mixture, until no streaks of egg white remain.
  6. Once combined, carefully pour the soufflé mixture into the prepared soufflé dishes, filling each to just below the inside rim. Place the soufflé dishes onto a baking sheet and transfer to the preheated oven. Immediately reduce the oven temperature to 375 degrees F (190 degrees C) and bake for approximately 20-25 minutes.
  7. When the soufflé is well risen and shows slight cracks on top, quickly and lightly sprinkle the surface with powdered sugar. Continue baking for another 5-10 minutes. The soufflé is perfectly creamy in the center when a cake tester inserted into the cracked tops comes out slightly coated. For a fully set center, you can bake for a few more minutes.
  8. Optional: If you prefer a firmer, more fully cooked center and a soufflé that will hold its height longer, you can continue baking for a few extra minutes until a tester comes out clean.
  9. Serve immediately with a dusting of powdered sugar, a dollop of fresh whipped cream, or a scoop of vanilla ice cream for an ultimate dessert experience.

The Realities of Soufflé Photography (and Baking!)

On a lighter note, I must share a little behind-the-scenes glimpse into the world of baking and food photography, especially when it comes to a delicate dessert like a soufflé. I’ve attempted to photograph this Meyer Lemon Soufflé twice in the past month, and each time presented its own unique set of challenges! The elusive nature of a soufflé, particularly when aiming for that desirable rich and gooey center (as opposed to a more uniformly set one), means it begins to deflate almost immediately as it cools. This transforms the photo shoot into a frantic race against time – typically, no more than five minutes from oven to camera lens to capture its fleeting beauty.

Imagine, you’re in the zone, trying to frame the perfect shot, when suddenly your little one decides it’s the opportune moment to demand attention from the next room. This can easily lead to “soufflé photography mishaps,” like realizing later that a giant crumb has somehow become the focal point of your otherwise stunning shot because you rushed through reviewing the images. Such is the delightful chaos of balancing a passion for baking with the beautiful demands of family life!

Ultimately, I decided against re-baking the soufflé yet again just for a “perfect” picture. What matters most is the incredible taste and the joy it brings. So, while these images might not be absolutely flawless in a commercial sense, they authentically represent the delicious reality of this Meyer Lemon Soufflé. Trust me, its taste is utterly divine, even if its photographic debut involved a few crumbly photobombs. It’s a gentle reminder that sometimes, the most authentic moments, and the most delicious results, are the ones we simply savor, imperfections and all.
