Embracing the Season: The Joy of Fresh Strawberry Picking

Happy Monday, dear friends! I hope your weekend was as splendid as ours. We were blessed with gorgeous, sunny weather, which provided the perfect opportunity for one of our favorite seasonal adventures: strawberry picking! If you’ve followed this blog for a while, you know my immense love for strawberries. So, imagine the sheer delight of spending a glorious afternoon at a local farm, harvesting a whopping 15 pounds of these ruby-red gems. Even at 34 weeks pregnant, kneeling down to reach those succulent berries was a joyful endeavor, made even more enjoyable with my wonderful husband by my side, tending to my every whim – truly one of the many perks of pregnancy!

From Berry Patch to Baked Bliss: A Culinary Adventure Begins

My initial ambition for this abundant strawberry haul was to delve into the world of canning. It’s something I’ve always wanted to try but found myself intimidated by the processes of sterilizing jars and boiling. This time, I decided to conquer that fear head-on! Thanks to invaluable preserving guides from resources like Simple Bites and Love and Olive Oil, I believe our first attempt at homemade strawberry jam was a success. Only time will tell if the jam truly keeps its freshness, but the experience itself was incredibly rewarding.

However, you know I couldn’t resist using some of those incredible fresh strawberries for baking right away! The very next morning, these delightful Strawberry Lemon Baked Donuts were the first items to emerge from my kitchen. There’s something undeniably satisfying about transforming freshly picked fruit into a comforting, homemade treat. These donuts capture the essence of those sun-ripened berries, infusing every bite with natural sweetness and a hint of zesty brightness.

Just look at them – aren’t they absolutely charming? These aren’t just any donuts; they’re a masterclass in flavor and texture. Imagine a super soft, tender lemon donut, generously studded with pieces of juicy, sweet strawberries. Then, to elevate the experience even further, each donut is crowned with a luscious, vibrant strawberry glaze. The combination is beyond delicious, striking a perfect balance between fruity sweetness and bright, tangy lemon. It’s everything a morning donut should be and so much more!

The best part? These beauties are baked, not fried. This means they are incredibly easy to prepare, require no messy hot oil, and are ready to enjoy in just about 30 minutes from start to finish. The baking process yields a wonderfully light and cake-like texture that truly lets the fresh fruit and citrus flavors shine through. This recipe is perfect for busy mornings, a special brunch, or an impromptu sweet treat when you need a little burst of sunshine in your day. The fresh ingredients make all the difference, creating a homemade donut that tastes infinitely better than anything store-bought.

Strawberry Lemon Baked Donuts

Prep Time

Total Time

Ingredients

For the Donuts

  • 1 cup cake flour, sifted
  • ⅓ cup plus 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ⅓ cup plus 1 tablespoon buttermilk
  • Juice of half a lemon
  • 1 tablespoon unsalted butter, melted and cooled slightly
  • 1 egg
  • 1 teaspoon vanilla extract
  • ¼ cup chopped strawberries

For the Glaze

  • 1 cup fresh strawberries
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 375 degrees F (190°C). Lightly grease a doughnut pan with baking spray and set aside. In a medium bowl, whisk together the cake flour, granulated sugar, baking powder, and salt. In a separate measuring cup or small bowl, whisk together the wet ingredients: buttermilk, melted butter, egg, lemon juice, and vanilla extract.
  2. Add the wet ingredients to the dry ingredients and mix gently until just combined. Be careful not to overmix, as this can result in tough, rubbery donuts. Gently fold in the chopped strawberries. Using a small spoon or piping bag, scoop the batter into the prepared donut pan, filling each cavity approximately two-thirds full.
  3. Bake for 8-10 minutes, or until the donuts are golden brown, baked through, and spring back lightly when touched. Remove the pan from the oven and let the donuts cool in the pan for 1 minute before carefully transferring them to a wire cooling rack to cool completely. While the donuts are cooling, prepare the vibrant strawberry glaze.
  4. To make the glaze, combine the fresh strawberries and powdered sugar in a blender or food processor. Blend until the mixture is smooth and free of lumps. Pour the glaze into a medium bowl. If the glaze appears too thin to coat the donuts effectively, gradually add more powdered sugar, one tablespoon at a time, blending after each addition, until you reach your desired consistency.
  5. Once the donuts are completely cooled, dip the top of each donut into the prepared strawberry glaze, allowing any excess to drip off. Place the glazed donuts back on the cooling rack to allow the glaze to set, which typically takes about 20 minutes. Serve and enjoy! These delightful donuts are best enjoyed within two days for optimal freshness.

Notes

Adapted from Girl Versus Dough

For an extra burst of lemon flavor, consider adding a teaspoon of lemon zest to your donut batter. Ensure your buttermilk is at room temperature for a smoother batter and more even baking. If you don’t have cake flour, you can substitute it with all-purpose flour by removing 2 tablespoons of flour per cup and replacing it with 2 tablespoons of cornstarch, then sifting the mixture together. This helps achieve a lighter texture. The tenderness of these baked donuts makes them an ideal alternative to their fried counterparts, offering a guilt-free indulgence.
