A Cookie By Many Names: Unraveling the History of Snowball Cookies

These delightful treats may not boast vibrant colors or intricate decorations like some traditional holiday cookies, but they more than compensate with their rich, melt-in-your-mouth texture and irresistible flavor. Known universally as Snowball Cookies due to their powdery white finish, they travel across cultures and continents under various cherished aliases. In Russia, they are celebrated as “Russian Tea Cakes,” often enjoyed with a cup of hot tea. Across the border in Mexico, they grace festive occasions as “Mexican Wedding Cookies,” symbolizing purity and celebration. Despite the different names, the core essence remains the same: a tender, buttery shortbread-like cookie, packed with finely chopped nuts (most commonly walnuts or pecans), and generously coated in delicate powdered sugar.

Yet, one bite was all it took. Their initial apprehension melted away, replaced by broad smiles stretching from ear to ear, faces and hands dusted liberally with powdered sugar – a sure sign of pure cookie bliss! First, ensure your butter is at room temperature. This is crucial for a smooth, creamy dough. Beat the unsalted butter until it is light, fluffy, and perfectly creamy, usually taking about 1-2 minutes in a stand mixer.

Next, gradually add in your remaining dry ingredients, including the all-purpose flour, chopped walnuts, vanilla extract, and one-third of the total powdered sugar. Mix everything together on a low speed until a cohesive dough ball begins to form, scraping down the sides of the bowl as needed to ensure all ingredients are well incorporated.

Scoop tablespoon-sized portions of dough and roll them into uniform, approximately 1-inch balls. Place these dough balls evenly spaced on your prepared baking sheet.

Snowball Cookies

Bake your cookies for about 15 minutes, or until the edges are just lightly golden. Immediately transfer them to a wire rack to cool slightly. It’s important they are still warm but cool enough to handle for the first powdered sugar roll.

Once the cookies have cooled down a bit and are still warm to the touch, roll them generously in the remaining powdered sugar. This initial coating will adhere beautifully to the slightly warm surface.

Snowball Cookies

Let them cool completely on the wire rack, then give them a second roll in powdered sugar for that perfect “snowball” finish. This double-coating ensures they look as festive as they taste.

Serve these pillowy soft cookies with a napkin or on a plate – you’ll want to avoid a powdered sugar explosion, as they tend to disappear remarkably fast! Essential Ingredients for Perfect Snowball Cookies

Creating the perfect batch of Snowball Cookies relies on a few key ingredients. Here’s a deeper look into what you’ll need and why:

What ingredients will I need to complete this recipe?

You will need the following ingredients:

  • Unsalted butter: We recommend unsalted butter to control the salt content. However, if you prefer a slight salty contrast to the sweetness, you can certainly use salted butter. Ensure it’s at room temperature (around 60-65°F or 15-18°C) for optimal creaming.
  • All-purpose flour: Unbleached all-purpose flour works wonderfully, but bleached flour will also suffice. For best results, use a kitchen scale to measure flour accurately by weight if possible, otherwise, spoon and level it to avoid adding too much, which can lead to dry, crumbly cookies. Please note, this recipe was not tested with alternative flours.
  • Chopped walnuts: Walnuts are the traditional choice for this recipe, lending a delightful earthy flavor and delicate crunch. Pecans are another fantastic alternative, offering a slightly sweeter, buttery note. Whichever nut you choose, make sure they are finely chopped for even distribution throughout the dough.
  • Vanilla extract: High-quality vanilla extract enhances the overall flavor profile. Imitation vanilla extract will work well too. For a delicious twist, consider using almond extract for a marzipan-like flavor, or maple extract for a warm, cozy variation perfect for autumn and winter.
  • Powdered sugar: This fine sugar is essential for both sweetening the dough and creating that iconic snowy coating. Ensure you have enough for both!

Recommended Equipment for Effortless Baking

Having the right tools can make your baking experience much smoother:

What supplies will I need to complete this recipe?

You will need:

  • Baking sheet and parchment paper: Parchment paper prevents sticking and ensures even baking.
  • Standing mixer and paddle attachment: A stand mixer makes creaming the butter and mixing the dough incredibly easy and efficient. We absolutely love our KitchenAid mixer for this!
  • Cooling rack: Essential for allowing your cookies to cool properly, preventing sogginess, and making the double roll in powdered sugar much simpler.
  • Tablespoon measuring tool: For scooping uniform cookie dough balls.
  • Shallow bowl or lipped plate: Perfect for easily rolling the warm cookies in powdered sugar.

Can I make this recipe without a standing mixer?

Absolutely! You can use a handheld electric mixer with beater attachments instead of a standing mixer. While creaming butter by hand is possible, it can be quite a workout to achieve the desired creamy consistency, so an electric mixer is highly recommended for ease and efficiency.

Pro Tips for Snowball Cookie Success

Achieving perfect snowball cookies every time is easy with these helpful hints:

  • Butter Temperature is Key: Ensure your unsalted butter is at true room temperature (60-65°F). If it’s too cold, it won’t cream properly; if it’s too warm, the dough might be too soft, leading to flat cookies.
  • Don’t Overmix: Once you add the flour, mix until just combined. Overmixing can develop the gluten in the flour, resulting in tougher cookies rather than the delicate, crumbly texture you desire.
  • Double Roll for the Perfect Snow: The secret to their iconic snowy appearance is a double roll in powdered sugar. The first roll when the cookies are warm allows the sugar to adhere nicely, creating a slightly melty, fudgy layer. The second roll after they’ve completely cooled provides that fresh, bright white finish.
  • Cooling Patience: It’s tempting to dive into warm cookies, but allowing them to cool completely before the second roll helps them firm up and prevents crumbling.
  • Uniformity for Even Baking: Use a tablespoon or a small cookie scoop to ensure your dough balls are roughly the same size. This guarantees they bake evenly.

Common Snowball Cookie Questions Answered (FAQs)

Here are answers to some frequently asked questions about these beloved cookies:

Are snowball cookies, Russian tea cakes, and Mexican wedding cakes the same thing?

Yes, indeed! These delightful cookies are essentially the same confection, known by different names across various cultures. They all consist of baked balls of buttery dough, typically filled with chopped nuts like walnuts or pecans, and generously rolled in powdered sugar. Whichever name you use, their absolutely delicious flavor remains constant!

How long do snowball cookies last?

These cookies will stay wonderfully fresh for 3-4 days when stored in an airtight container at room temperature. If you place the container in the refrigerator, they can maintain their quality for up to 2 weeks. For best presentation and flavor, if they’ve been stored for a few days, we like to give the cookies a quick, fresh roll in powdered sugar right before serving.

Can I freeze snowball cookies?

Yes, snowball cookies freeze beautifully! You can freeze either the baked and powdered sugar-coated cookies or the raw dough balls.

  • Baked cookies: Once completely cooled and double-coated in powdered sugar, arrange them in a single layer on a baking sheet and freeze until solid (about 1-2 hours). Then, transfer them to an airtight freezer-safe container or bag, separating layers with parchment paper. They will keep for up to 2-3 months. Thaw at room temperature and re-roll in powdered sugar if desired before serving.
  • Raw dough: Roll the dough into balls as directed, then freeze them on a baking sheet until solid. Transfer to a freezer-safe bag. When ready to bake, you can bake them from frozen (they might need an extra minute or two) or let them thaw slightly in the refrigerator before baking.

Why did my snowball cookies flatten?

Several factors can cause snowball cookies to flatten:

  • Warm butter: If your butter was too warm (melted or greasy), it won’t hold its structure during baking, causing the cookies to spread. The ideal “room temperature” for butter ranges between 60-65°F (15-18°C).
  • Over-handling the dough: Excessive handling of the dough can warm it up, making the butter melt and leading to spreading. If you suspect this, place the baking sheet of shaped cookies in the freezer for about 10 minutes before baking to firm them up.
  • Warm baking sheets: Always use a cool baking sheet for each batch of cookies. Placing cookie dough on a warm baking sheet will cause the butter to melt prematurely, resulting in flattened cookies.
  • Too much moisture or too little flour: Ensure accurate measurement of ingredients, especially flour. Too little flour can make the dough too soft and prone to spreading.

Why are my snowball cookies crumbling?

If your cookies are crumbling, it’s usually due to one of these reasons:

  • Not fully cooled: The cookies are very delicate when warm. As they cool, their structure solidifies. If you try to pick up or eat a cookie before it finishes cooling, it may crumble. Patience is key!
  • Too dry: If the cookies are fully cooled and still crumbling, they might be too dry. This could be due to extra flour (if you measured a very heaping scoop, for example, which adds more flour than intended). While this recipe doesn’t explicitly ask for flour to be spooned and leveled, a significantly over-scooped amount could lead to excessive dryness. Ensure precise measurements.
  • Overbaking: Baking the cookies for too long can dry them out, making them brittle and crumbly. They should be just lightly golden at the edges.

Variations to Explore: Customizing Your Snowball Cookies

While the classic recipe is perfect as is, feel free to get creative with your Snowball Cookies:

  • Nutty Alternatives: Instead of walnuts or pecans, try finely ground hazelnuts or even pistachios for a different flavor profile.
  • Citrus Zest: Add a teaspoon of lemon or orange zest to the dough for a bright, refreshing twist.
  • Spice It Up: A pinch of cinnamon or cardamom can add a warm, exotic note to your cookies.
  • Extract Experiments: Beyond vanilla, consider using a touch of rum extract for a boozy flavor or peppermint extract for a festive minty treat.
  • Mini Chocolate Chips: For those who truly miss chocolate, fold in a small amount of mini chocolate chips into the dough before rolling.

Ingredients

  • 1 cup unsalted butter, room temperature
  • 2 cups all-purpose flour
  • 1 cup chopped walnuts
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar, divided

Instructions

  1. Preheat the oven to 350 ℉ and line a baking sheet with parchment paper.
  2. Add butter to the bowl of a standing mixer and beat on a medium speed until creamy, about one to two minutes.
  3. Add the flour, chopped walnuts, vanilla extract and ⅓ cup powdered sugar. Mix on the stir setting for 15 seconds, scrape down the sides and continue to mix on the stir setting until a ball of dough forms, scraping down the sides as needed.
  4. Scoop 1 Tablespoon of the mixture and use your hands to roll the dough into small balls about 1 inch big and place them evenly spread out on the prepared baking sheet.
  5. Bake for 15 minutes. The edges should be a light brown. Set on a wire rack until they’re still warm, but cool enough to handle.
  6. Place the remaining 1 ⅔ cup of powdered sugar in a shallow bowl or lipped plate.
  7. Once cool enough to touch, roll the cookies in the powdered sugar. Set back on the wire rack until completely cool. Once cooled, roll the cookies again in the powdered sugar. *

Notes

  1. Cooling time includes the time it takes to coat the cookies in sugar (about 15 minutes):
  2. * The cookies should be cool enough to handle after about 30 seconds of sitting on the wire rack.
  3. The first round of coating the cookies takes about 2-3 minutes and an additional 10 minutes to cool completely plus 2-3 minutes for the second round of cookies.
  4. Powdered sugar is messy! Place some wax, parchment paper, or a cool baking sheet under the wire rack to catch the powdered sugar.
  5. We tested baking one round of cookies on a Silpat instead of parchment paper and found that the ones on the Silpat were more prone to spreading during the bake, while the ones baked on parchment paper, did not.
