Ingredients

Crust:

  • 30 mint Oreos
  • 5 tablespoons butter, melted

Filling:

  • 1 cup heavy whipping cream, cold
  • 16 ounces cream cheese, softened
  • 1/3 cup whole milk
  • 2 teaspoons vanilla extract
  • ¾ cup powdered sugar
  • ¼ cup Irish Cream (I used Bailey’s)

Topping:

  • ½ cup whipped cream
  • Chocolate shavings

Instructions

For the Mint Chocolate Oreo Crust:

Preheat your oven to 350 degrees F (175°C). Lightly grease a 9-inch springform pan and set it aside. In the bowl of a food processor, add the mint Oreos and pulse until they are finely ground into crumbs. Drizzle the melted butter over the Oreo crumbs and pulse again until thoroughly combined, resembling wet sand. Press this mixture firmly and evenly into the bottom of the prepared springform pan. Bake the crust for approximately 10-12 minutes, or until it is just set. Transfer the pan to a wire rack and allow the crust to cool completely before proceeding.

For the Creamy Irish Cream Filling:

While the crust cools, prepare the decadent filling. In the bowl of a KitchenAid® Stand Mixer fitted with the whisk attachment, whisk the very cold heavy cream on medium-high speed until soft peaks begin to form.
