Lemon Blueberry Pancakes
These lemon blueberry pancakes are ideal for Easter brunch and weekend gatherings. Fluffy buttermilk lemon pancakes are generously topped with a homemade blueberry-thyme compote and a dollop of whipped cream.

Ingredients
For the Pancakes:
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon kosher salt
- 2 cups buttermilk
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- lemon zest (from 1 large lemon)
- 1 teaspoon fresh lemon juice
- 1/2 cup fresh blueberries
For the Blueberry Thyme Compote:
- 1/2 cup fresh blueberries
- 2 tablespoons granulated sugar
- 1 teaspoon lemon zest
- 1 teaspoon finely chopped fresh thyme
- A dash of almond extract (optional, but recommended)
For Serving:
- Whipped cream (homemade or store-bought)
Instructions
For the Blueberry Thyme Compote:
- In a medium saucepan set over medium-low heat, combine the blueberries, granulated sugar, lemon zest, and finely chopped thyme. Stir gently to combine. Cook, stirring occasionally, until the juices are released and the berries begin to break down, about 10-12 minutes. The compote should thicken slightly.
- Remove the saucepan from the heat and stir in the almond extract, if using. Allow the compote to cool completely while you prepare the pancake batter. This can be made ahead of time and stored in the refrigerator.
For the Lemon Blueberry Pancakes:
- In a large mixing bowl, whisk together the dry ingredients: all-purpose flour, granulated sugar, baking powder, baking soda, and kosher salt. Ensure there are no lumps and the ingredients are well combined.
- In a separate medium bowl, whisk together the wet ingredients: buttermilk, large eggs, melted unsalted butter, lemon zest, and fresh lemon juice. Whisk until smooth.
- Pour the wet ingredients into the dry ingredients. Using a whisk or rubber spatula, mix until just combined. Be careful not to overmix; a few small lumps are perfectly fine and contribute to tender pancakes. Gently fold in the fresh blueberries.
- Heat your pancake griddle or a large nonstick skillet over medium heat. To test if it’s ready, sprinkle a few drops of water onto the surface; they should sizzle and evaporate immediately. Lightly spray the cooking surface with cooking spray or brush with a little melted butter.
- Pour about a ⅓ cup of batter for each pancake onto the hot griddle, leaving some space between them. Cook for 2-3 minutes per side, or until bubbles appear on the surface of the pancakes and the edges look set. The bottom should be golden brown.
- Flip the pancakes gently with a spatula and cook for another 1-2 minutes on the second side, until golden brown and cooked through.
