- 1 ¼ cups all-purpose flour
- 2 tablespoons cornstarch
- 1 ¼ cups confectioners’ sugar
- 2 teaspoons baking powder
- 1/3 teaspoon ground cardamom
- pinch of salt
- 3 large eggs, separated, at room temperature
- 1/3 cup vegetable oil
- ½ cup orange juice
- zest of 1 orange
- 1 teaspoon pure vanilla extract
- Silvered pistachios, for garnish
- Lightly sweetened whipped cream, for serving
Instructions
- Prepare Pistachios: In a small bowl, soak the raw pistachios in water overnight. The next day, drain them thoroughly, pat dry with paper towels, and then blend into a fine paste using a food processor or blender. Set the pistachio paste aside.
- Preheat Oven & Prepare Pan: Preheat your oven to 325 degrees F (160 degrees C). Lightly grease an 8-inch round cake pan with baking spray and line the bottom with parchment paper. Grease the parchment paper as well.
- Combine Dry Ingredients: In a large mixing bowl, sift together the all-purpose flour, cornstarch, confectioners’ sugar, baking powder, ground cardamom, and a pinch of salt. Sifting helps to aerate the ingredients and prevent lumps.
- Whip Egg Whites: Using the clean bowl of your stand mixer (or a large bowl with a hand mixer), whip the egg whites until they form soft peaks. Gently transfer the whipped egg whites to another bowl and set aside. Ensure your mixer bowl is clean before proceeding.
- Combine Wet Ingredients & Batter: In the clean mixer bowl, beat the egg yolks, vegetable oil, orange juice, orange zest, and pure vanilla extract on medium speed until they are well combined and smooth. Gradually add the sifted dry ingredients to the wet mixture and mix on low speed just until incorporated. Be careful not to overmix.
