Ingredients
For Cupcakes:
- 2 ½ cups all-purpose flour
- 2 ½ teaspoons baking powder
- ¼ teaspoon salt
- 1 ½ cups granulated sugar
- 1 tablespoon lemon zest, from about 2 lemons
- ¾ cup unsalted butter, softened at room temperature
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- ½ cup freshly squeeze lemon juice, from about 3 lemons
- ¾ cup milk
- a few drops red food coloring (optional)
For Pink Lemonade Frosting:
- 1 ½ cups unsalted butter, at room temperature
- 3-4 cups powdered sugar
- 1 lemon, zest + juice
- a few drops red food coloring (optional)
Instructions
For Cupcakes
- Heat oven to 350 degrees Fahrenheit (175 degrees Celsius). Prepare two muffin tins by lining them with cupcake liners. This ensures easy removal and a clean finish.
- In a medium-sized bowl, whisk together the dry ingredients: all-purpose flour, baking powder, and salt. Whisking ensures these ingredients are evenly distributed, preventing pockets of leavening agents.
- In the bowl of an electric mixer (like the KitchenAid Stand Mixer!), combine the granulated sugar and lemon zest. Rub the zest into the sugar with your fingers until the sugar becomes fragrant and slightly moistened; this technique releases the essential oils from the zest, intensifying the lemon flavor. Add in the softened unsalted butter and beat the butter and sugar on medium speed until the mixture is light, fluffy, and pale, which should take about 3-5 minutes. Incorporate the large eggs one at a time, mixing well after each addition until just combined. Beat in the vanilla extract and fresh lemon juice. Now, you will alternately add the dry flour mixture and milk, starting and ending with the flour mixture. Beat well after each addition until the batter is smooth. Bake the cupcakes in the preheated oven for approximately 18-20 minutes, or until the centers spring back when gently touched and a wooden skewer or toothpick inserted into the center comes out clean. Once baked, remove the cupcakes from the oven and allow them to cool completely on a wire cooling rack before frosting.

- In a large mixing bowl, beat the room-temperature unsalted butter on high speed for 3-4 minutes until it becomes pale, smooth, and creamy. Gradually add the powdered sugar, lemon zest, and fresh lemon juice. Begin mixing on low speed for a minute to combine the ingredients without creating a sugar cloud, then increase to medium-high speed and beat until the buttercream is light, fluffy, and well combined.
