The Secret to an Unforgettable Crust: Famous Amos Coconut Cookies

Forget everything you know about typical cheesecake crusts made from graham crackers or store-bought mixes. This Coconut Cheesecake elevates the game with a homemade, utterly irresistible base crafted from Famous Amos coconut cookies. Yes, you read that right – these beloved crunchy delights are the secret to a crust that is not only buttery and perfectly flaky but also infused with an intense, authentic coconut flavor that complements the filling beautifully. The beauty of using these particular cookies lies in their inherent crunchiness and bold taste, which adds an incredible depth that a traditional crust simply can’t match.

The process is delightfully simple: just crush the cookies until they form fine crumbs, then mix them with rich, melted butter. The result is a sweet-and-salty symphony that provides the perfect foundation for our exquisite coconut filling and vibrant toppings. This unique crust doesn’t just hold its shape; it adds an essential layer of texture and flavor, ensuring every bite is an adventure. It’s a game-changer that sets this tropical cheesecake apart from any other you’ve tasted.

Crafting the Dreamy, Velvety Coconut Filling

While the crust is certainly a star, the filling is where the true magic of this Coconut Cheesecake comes alive. The base is a classic, luxurious blend of softened cream cheese and heavy whipping cream, promising that signature smooth, decadent texture we all adore in a cheesecake. However, the transformation truly begins with the addition of natural coconut sugar and a generous splash of pure coconut extract. These key ingredients don’t just add sweetness; they infuse the entire filling with an aromatic, deep coconut essence that transports your taste buds straight to the tropics.

For those looking to add an extra layer of complexity and a hint of grown-up flair, a dash of rum can be incorporated into the filling. This subtle alcoholic note enhances the tropical profile, creating a truly sophisticated dessert that’s perfect for any adult gathering. Achieving the perfect velvety texture is crucial; ensure your cream cheese is completely softened to avoid any lumps. Beat it until incredibly smooth before gradually incorporating the sugar and flour, then the cream and extract. Finally, mix in the eggs one at a time, being careful not to overmix, which can lead to a dense or cracked cheesecake. If you’re a devout lover of all things coconut, this filling will undoubtedly become your new obsession.

The Perfect Finishing Touches: Toasted Coconut and Maraschino Cherries

Once your rich, creamy coconut filling is gently settled into its golden-brown, buttery cookie crust, the final flourish comes with the toppings. These aren’t just decorative; they add essential layers of flavor, texture, and visual appeal that complete the tropical experience. First, a generous mound of perfectly toasted coconut flakes crowns the cheesecake, offering a delightful crunch and an intensified coconut aroma. Toasting the flakes brings out their natural sweetness and nuttiness, adding an irresistible complexity. Be sure to keep a close eye on them under the broiler, as they can go from golden to burnt in a blink!

Accompanying the toasted coconut are those vibrant, irresistible maraschino cherries. For many of us, these bright red gems evoke cherished childhood memories – sneaking them from the fridge when our parents weren’t looking, or using them to adorn countless Shirley Temples. Beyond the nostalgia, their intense sweetness and juicy pop provide an outstanding balance to the rich, dense filling of the cheesecake. The vivid red also creates a stunning visual contrast against the creamy white and golden brown, making this dessert as beautiful to behold as it is delicious to eat. Together, these toppings transform the cheesecake into a true showstopper, a feast for both the eyes and the palate.

Tips for Baking a Flawless Coconut Cheesecake

Baking a cheesecake can seem daunting, but with a few key tips, you can achieve a perfectly smooth, uncracked masterpiece every time. The secret often lies in controlled temperatures and patient cooling. Start by ensuring your springform pan is well-greased to prevent sticking. When baking, the initial higher temperature helps to set the edges, while reducing the heat allows the center to cook gently and evenly. Resist the urge to open the oven door frequently, as sudden temperature drops are a common cause of cracks.

A perfectly baked cheesecake will have set edges but a slightly jiggly center. Remember, it will continue to firm up as it cools. Overbaking is the enemy of a moist, creamy cheesecake, leading to a dry, crumbly texture. Once baked, turn off the oven and crack the door open, allowing the cheesecake to cool slowly inside for 10-15 minutes. This gradual transition helps prevent drastic temperature changes that can cause cracking. After this, transfer it to a wire rack to cool completely at room temperature, and then – the most crucial step – refrigerate it for at least 6 hours, or ideally, overnight. This extended chilling time is essential for the cheesecake to fully set, develop its rich flavor, and achieve that signature dense, creamy texture.

Serving Your Tropical Masterpiece with Style

This Coconut Cheesecake is the quintessential summer dessert, making it the perfect companion for refreshing beverages and lively poolside parties. Imagine a slice of this creamy delight paired with a crisp iced tea, a sparkling lemonade, or even another tropical cocktail. It’s an ideal treat for backyard BBQs, family gatherings, or simply a quiet evening enjoying the summer breeze.

Given the rich and dense nature of this cheesecake, I highly recommend opting for sturdy paper plates if you’re serving it at a party. This ensures your guests can comfortably enjoy their slice without any unfortunate mishaps. Additionally, to maintain its pristine appearance and creamy texture, always keep your cheesecake cooling in the refrigerator until you are ready to serve. For outdoor events, consider placing the serving platter on an ice-cold towel or a tray of ice to prevent it from softening and losing its signature look in the summer heat. With these simple tips, your coconut cheesecake will be the star of any summer occasion, impressing everyone with its tropical charm and exquisite taste.

Ingredients

Crust

  • 2 cups coconut cookies, I used Famous Amos
  • 6 tablespoons butter, softened

Filling

  • 32 ounces cream cheese, softened
  • 1 cup coconut sugar
  • 3 tablespoon all-purpose flour
  • 1 teaspoon coconut extract
  • 1 cup heavy whipping cream
  • 3 large eggs, at room temperature

Topping

  • Whipped cream or cool whip
  • Toasted coconut flakes
  • Maraschino cherries

Instructions

Crust

  1. Preheat your oven to 350 degrees F and prepare a 9-inch springform pan by spraying generously with non-stick spray. Set aside.
  2. In a food processor, pulse coconut cookies until you get about 2 cups of crumbs. Add the melted butter and pulse until well combined.
  3. Pour the crumbs into the bottom of the prepared springform pan and use the back of a spoon or measuring cup to press the crumbs to form a crust.
  4. Bake the crust for 10 minutes and allow it to cool on a wire rack while you prepare the filling.

Filling

  1. In the bowl of a stand mixer fitted with a paddle attachment, beat the cream cheese on high speed for 4-5 minutes, scraping the sides and bottom of the bowl often, until soft and there are no lumps remaining.
  2. With the mixer on low speed, slowly pour in the coconut sugar and flour and mix until well combined. Scrape the sides and bottom of the bowl and mix additionally if needed.
  3. Next, slowly pour in the heavy whipping cream and coconut extract. Mix on low speed until combined. Slowly increase the speed to high for about one minute. Scrape the sides and bottom of the bowl and mix additionally if needed.
  4. Add the eggs in last, one at a time, mixing until just combined making sure not to overmix.
  5. Pour the batter over the baked crust and gently tap the springform on the counter to release any air bubbles.
  6. Bake at 350 for 15 minutes then, without opening the oven door, reduce heat to 200 degrees and bake for an additional 50-55 minutes or until the edges are set and the center is still slightly jiggly. (Keep in mind the cheesecake will set as it cools, you don’t want to overbake, or you will have a dry and crumbly cheesecake).
  7. Turn off the oven and crack the oven door and allow the cheesecake to cool for 10-15 minutes before removing it to a wire rack to cool completely.
  8. Transfer to a wire rack to cool completely before placing in the refrigerator for at least 6 hours, but overnight is recommended.

Topping

  1. Turn your oven on broil and place about 1 ½ cups shredded coconut in an even layer on a large baking sheet. Broil until golden brown. Be very careful because they will burn very quickly.
  2. Top the set cheesecake with whipped cream or cool whip and sprinkle with the toasted coconut. Add maraschino cherries if desired and serve!
  3. Keep any leftovers stored in an airtight container in the refrigerator for up to three days.
