Hello, wonderful bakers and food enthusiasts! As the air outside grows crisper and the leaves begin their magnificent transformation, there’s nothing quite like the comforting embrace of a freshly baked treat. Today, I’m thrilled to share a recipe that truly encapsulates the essence of autumn: Sweet Potato Scones with Maple Icing. These aren’t just any scones; they’re a symphony of warm spices, earthy sweet potato, and a decadent maple glaze, making them the ultimate companion for a brisk fall morning or a cozy afternoon break. Imagine pairing one of these tender, flaky delights with a steaming mug of coffee or tea – pure bliss!
Fall, for many of us, is a season of reflection, gratitude, and most importantly, connecting with loved ones. It’s a time when our homes become sanctuaries of warmth, filled with the inviting aromas of seasonal baking and the joyful sounds of family gatherings. From pulling out those favorite cozy sweaters to planning more elaborate family meals, autumn encourages us to slow down and savor every precious moment. This recipe for sweet potato scones is designed to enhance those moments, bringing everyone together around the table with smiles and satisfied appetites.

I was honored when Eggland’s Best approached me to develop a family-friendly recipe in celebration of National Family Meals Month® in September. Immediately, these sweet potato scones came to mind. They’ve quickly become a cherished staple in our household, a testament to their universal appeal. The adults in our family can’t get enough of them, enjoying each bite with their morning coffee, while our little ones happily pair them with fresh fruit and a glass of milk for a wholesome breakfast or a delightful snack. This recipe truly brings everyone joy, including our 18-month-old, who has already mastered the word “scone” and frequently requests “more!” It’s a true family favorite that fosters togetherness and delicious memories.

The past few months have undeniably shifted our daily routines, prompting us to spend more time at home and, consequently, enjoy more meals together. Initially, the challenge of preparing three meals a day, every single day, felt daunting. However, through trial and error, we discovered innovative ways to simplify and savor the process – from strategic meal prepping and embracing easier recipes to occasionally indulging in take-out. What emerged most prominently from this period was a profound appreciation for mealtimes, despite the often-long and demanding days. With a 1-year-old and a 5-year-old constantly on the go, mealtimes became those rare, precious opportunities when everyone would pause. This allowed me to engage in more meaningful conversations, especially with my 5-year-old, who often spins the most imaginative and hilarious stories while he eats. These moments are a highlight of my day, offering a welcome respite and connection amidst the constant juggle of working from home and keeping up with energetic children. Mealtimes truly are my favorite!

The Secret Ingredient: Nutritious Sweet Potatoes & Superior Eggland’s Best Eggs
What makes these sweet potato scones so incredibly special, beyond their irresistible flavor, is the inclusion of nutrient-rich sweet potatoes. This vibrant vegetable is a natural source of vitamins, fiber, and antioxidants, and it’s a staple my kids typically enjoy. However, for those clever parents out there whose children might be a bit more selective, these scones offer the perfect opportunity for a “nutrition sneak attack”! The mashed sweet potato blends seamlessly into the dough, adding moisture and a subtle sweetness that even the pickiest eaters won’t detect. They’ll be too busy enjoying the delicious taste and tender texture to notice the hidden goodness within.
But the nutrition story doesn’t end there. Another cornerstone of this recipe, and indeed many of my family’s favorite dishes, is the use of Eggland’s Best (EB) eggs. As a culinary enthusiast and a mom, I prioritize bringing the best possible nutrition to my family’s table, and EB eggs consistently exceed expectations. They are truly superior to ordinary eggs, boasting an impressive nutritional profile: they contain 6 times more Vitamin D, more than double the Omega-3s, and 25% less saturated fat. These enhanced nutrients contribute significantly to bone health, brain function, and overall well-being. By incorporating Eggland’s Best eggs into all my baking and cooking, I can confidently ensure that I’m maximizing the nutritional value of every meal I prepare for my family, making healthy eating both easy and delicious.

Baking Bliss: Your Guide to Perfect Sweet Potato Scones
Now, let’s get back to the star of our show: these glorious sweet potato scones! If you’re new to scone making, please don’t be intimidated. I promise you, they are incredibly straightforward to prepare, and the process is so enjoyable that it’s even perfect for inviting your kids to help in the kitchen. Baking together creates wonderful memories and teaches valuable skills!
To begin your scone adventure, gather all your dry ingredients in a large mixing bowl. This includes your flour, rich brown sugar, baking powder, a medley of warming pumpkin pie spice, ground cinnamon, nutmeg, baking soda, and a touch of kosher salt. Give these a thorough whisk until they are well combined and evenly distributed. This ensures every scone is perfectly spiced.

Next, the secret to truly flaky scones lies in the butter! Using a pastry cutter, or even your fingertips, carefully cut in cubes of cold butter into the dry ingredients. You’re aiming for a mixture that resembles coarse crumbs, with some pea-sized pieces of butter remaining. The cold butter creates pockets of steam during baking, which results in that irresistibly flaky texture we all adore in a good scone. Avoid overworking the butter, as warmth from your hands or excessive mixing can melt it too soon.

In a separate bowl, it’s time to prepare our wet ingredients. Whisk together the creamy mashed sweet potatoes, Eggland’s Best eggs (remembering those superior nutrients!), and most of your milk, reserving a small portion for brushing later. Ensure everything is thoroughly combined to create a smooth, consistent mixture. This liquid foundation will bring our scone dough to life, adding moisture and flavor.

Now, gently pour the wet ingredients into the bowl with your dry mixture. Using a spatula or wooden spoon, fold them together until *just* combined. The key here is not to overmix! Scone dough should be handled delicately; overworking it can develop the gluten in the flour too much, leading to tough scones rather than the tender, airy texture we’re striving for. A few dry streaks are perfectly fine at this stage.

Turn the shaggy dough out onto a lightly floured surface. With minimal handling, gently bring the dough together and knead it just a few times – about 4 to 5 turns are sufficient. This brief kneading helps to fully incorporate any remaining dry bits without developing too much gluten. You’ll notice the dough becoming a cohesive mass, yet still soft and pliable. Divide the dough into two equal halves for easier handling and consistent baking results.

Next, pat each half of the dough into an 8-inch circle, aiming for an even thickness. Then, using a sharp knife or a bench scraper, cut each circle into 8 wedges, just like you would slice a pizza. Carefully transfer these wedges onto your prepared baking sheets, ensuring they are spaced about an inch apart to allow for proper air circulation and even baking. Before baking, brush the tops of each scone wedge with the remaining milk. For an extra touch of sparkle and crunch, you can optionally sprinkle them with coarse or sparkling sugar.

And that’s it for the prep! Bake these beauties in a preheated oven for just 12 to 15 minutes, or until they turn a beautiful golden brown and are cooked through. The scent that fills your kitchen will be absolutely intoxicating!

Once they emerge from the oven, let them cool slightly on a wire rack. While still warm, the grand finale awaits: a luscious, sweet maple icing! Whisk together confectioners’ sugar, pure maple syrup, and a hint of ground nutmeg. This simple yet elegant glaze provides the perfect autumn-inspired finish, complementing the spiced scones beautifully. Drizzle it generously over each warm scone, letting it cascade down the sides, creating an inviting visual and an even more irresistible flavor.
There you have it, friends – a truly remarkable recipe for tender, flaky, and perfectly spiced Sweet Potato Scones with Maple Icing. They are the epitome of fall comfort food, ideal for enjoying on a crisp fall afternoon with your favorite hot beverage, or serving as a special breakfast treat for your beloved family. Ingredients
- 4 1/2 cups all-purpose flour
- 1/2 cup light brown sugar
- 4 teaspoons baking powder
- 3 teaspoons pumpkin pie spice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 cup (2 sticks) cold butter, cut in cubes
- 2 large Eggland’s Best eggs, at room temperature
- 1 1/2 cup mashed sweet potatoes
- 2/3 cup milk, divided
For the Glaze:
- 2 cups confectioners’ sugar
- 1/4 cup maple syrup
- 1/4 teaspoon ground nutmeg
Instructions
- Preheat your oven to 400 degrees F (200 C). Line two large baking sheets with parchment paper to prevent sticking and ensure easy cleanup.
- In a generously sized bowl, combine all your dry ingredients: flour, light brown sugar, baking powder, pumpkin pie spice, ground cinnamon, ground nutmeg, baking soda, and kosher salt. Whisk everything thoroughly until well combined and lump-free.
- Add the cold butter cubes to the dry mixture. Using a pastry cutter, or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter still visible. This is crucial for flaky scones.
- In a separate medium bowl, whisk together the Eggland’s Best eggs, mashed sweet potatoes, and 2/3 cup of milk (reserving 1/4 cup of the total milk for brushing the tops of the scones). Mix until the wet ingredients are smooth and well incorporated.
- Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or wooden spoon until just combined and the dry ingredients are moistened. Be careful not to overmix the dough, as this can result in tough scones.
- Turn the dough out onto a lightly floured surface. Gently knead the dough a few times, about 5-7 turns, just until it comes together into a cohesive ball. Divide the dough into two equal halves. Pat each half into an 8-inch circle, approximately 3/4-inch thick. Cut each circle into 8 wedges. Transfer the wedges to your prepared baking sheets, spacing them about an inch apart. Brush the tops of each scone wedge with the remaining 1/4 cup of milk. For an extra touch, you may sprinkle with sparkling sugar or cinnamon sugar if desired.
- Bake the scones for 12-15 minutes, or until they are golden brown on top and cooked through. Remove them from the oven and let them cool on a wire rack while you prepare the glaze.
- To make the maple glaze, whisk together the confectioners’ sugar, maple syrup, and ground nutmeg in a small bowl until smooth. Drizzle the glaze generously over the warm scones. Serve immediately and enjoy!
