In tribute to Stephanie’s wonderfully sweet nature, I wanted to create a dessert that was delicate, beautiful, and, of course, absolutely delicious for her baby shower. These vanilla anise cupcakes fit that vision perfectly and are truly suitable for any special celebration. The unique combination of vanilla, almond, and anise in these cupcakes is simply divine, creating a flavor profile that is both comforting and sophisticated.

Let’s break down this exquisite flavor experience. The foundation begins with a wonderfully moist and fluffy vanilla-almond cupcake base. This subtle yet rich cake provides the perfect canvas for the star of the show: a creamy, whipped vanilla anise frosting. My special anise frosting is crafted using milk that has been infused with anise seeds, a wonderful gift from my friend Renee. This infusion method imparts the sweet and aromatic essence of anise without overwhelming the delicate flavors of the cupcake itself. While you could certainly incorporate anise directly into the cupcake batter, I chose to concentrate its flavor solely in the frosting. This allows the classic sweetness of vanilla and the nutty undertones of almond in the cake to truly shine, creating a beautiful balance that comes alive with each bite. The result is a cupcake that whispers elegance and comfort, offering a sensory journey that is both familiar and exciting.

Baking Perfection: Tips for Fluffy Cupcakes and Creamy Frosting

Achieving bakery-quality cupcakes at home is easier than you think with a few key techniques. For our vanilla-almond cupcakes, ensuring your ingredients are at room temperature is crucial. This allows butter and eggs to emulsify properly with other ingredients, creating a smooth batter that bakes up light and airy. Overmixing is the enemy of fluffy cupcakes; once your wet and dry ingredients are just combined, stop mixing to avoid developing the gluten too much, which can lead to dense results. Fill your cupcake liners about two-thirds full to prevent overflow and ensure a perfectly domed top.

The anise-infused milk for the frosting is a game-changer. Infusing whole milk with dried anise pods for several hours in the refrigerator allows the distinct licorice-like flavor to gently steep into the milk, resulting in a subtle yet profound anise note in the buttercream. If anise pods are hard to find, a good quality pure anise extract can be used as a convenient substitute. For the frosting itself, whipping the butter thoroughly before adding other ingredients is essential for achieving that pale, creamy, and incredibly light texture. This aeration makes the buttercream wonderfully pipeable and melt-in-your-mouth delicious.

Vanilla Anise Cupcakes

These vanilla anise cupcakes are delightfully moist and fluffy, featuring a harmonious blend of vanilla-almond cake crowned with a luscious whipped anise buttercream.

Ingredients

  • 1 cup cake flour
  • ¾ cup all-purpose flour
  • 1 cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup (1 stick) unsalted butter cut into 1-inch cubes, room temperature
  • 2 large eggs, at room temperature
  • ½ cup whole milk, at room temperature
  • ½ teaspoon pure vanilla extract
  • ¼ teaspoon pure almond extract
  • 1 ½ cup (3 sticks) unsalted butter, softened
  • 3 cups confectioners’ sugar, sifted
  • 2-3 tablespoons milk infused with anise pods (or just use regular milk + ¾ teaspoon anise extract)
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Instructions

For Cupcakes

  1. Preheat oven to 325 degrees F. Line muffin tins with cupcake liners and set aside.
  2. In the bowl of an electric mixer, combine the dry ingredients (cake flour, all-purpose flour, granulated sugar, baking powder, salt) and mix on low-speed until well blended.
  3. Increase speed to medium-low and add the cubes of room temperature butter, one at a time, mixing each one for a few seconds before adding the next. Mix until there are no large chunks and the mixture resembles coarse crumbs.
  4. Add eggs, one at a time, mixing well after each addition until fully incorporated. In a small mixing bowl, whisk together the milk, vanilla extract, and almond extract. Increase mixer speed to medium and gradually add the wet ingredients to the dry mixture in 3 parts, mixing only until just incorporated and scraping down the bowls after each addition. Be careful NOT to overbeat the batter, as this will result in dense cupcakes.
  5. Divide batter evenly into the prepared cupcake liners, filling each about ⅔ full. Bake cupcakes until a toothpick inserted into the center comes out clean, approximately 17-20 minutes. Remove cupcakes from oven and let cool completely on a wire rack before frosting.

For Frosting

  1. To infuse milk with anise, soak dried anise pods in milk, covered, in the refrigerator for 4-6 hours (or even overnight) before using. If you don’t have anise pods, you can use ¾ teaspoon pure anise extract combined with 3-4 tablespoons of regular milk.
  2. Using the paddle attachment of an electric mixer, whip the softened unsalted butter on medium speed for a full 8 minutes. The butter will transform into a pale, incredibly creamy, and aerated consistency.
  3. Add the sifted confectioners’ sugar, anise-infused milk (or milk with extract), pure vanilla extract, and a pinch of salt to the whipped butter. Mix on low-speed for 1 minute to combine without creating a cloud of sugar. Then, increase the speed to medium and beat for another 6 minutes until the frosting is exceptionally light, creamy, and fluffy.
  4. Once the cupcakes are completely cooled, generously frost them using a piping bag or an offset spatula.
