My long-standing admiration for Cabot Creamery isn’t just for this recipe. I’ve consistently relied on their exceptional products to create a variety of crowd-pleasing dishes. For instance, their cheese has been the heart of my popular Chili Oil Pull Apart Bread, the star in my savory Grilled BBQ Chicken Pizza, and the secret ingredient in my comforting Stovetop Mac & Cheese. Each of these recipes, much like this game-day charcuterie board, is perfectly suited for serving during the Super Bowl or any casual get-together, showcasing the versatility and superior taste of Cabot cheeses.

If you’re a regular visitor here, you already know that Cabot is my absolute go-to brand for the finest-tasting cheese available. What makes them truly special? Cabot Creamery is a unique cooperative owned entirely by dedicated dairy farm families. This commitment means that 100% of their profits are reinvested directly back into supporting these hardworking farmers. As a certified B Corp, they are not only focused on producing award-winning cheese and dairy products but also on making a positive impact on their communities and the environment. Now, let’s dive deeper into these incredible dips. Both the homemade queso and the beer cheddar cheese dip are meticulously crafted to deliver an explosion of rich cheddar cheese flavor. Our homemade queso dip is a vibrant concoction, packed with finely chopped yellow onion, zesty jalapeño pepper, fresh ripe tomato, mild green chilies, and aromatic garlic. If you’ve never ventured into making queso from scratch, you’re in for a delightful surprise. It’s surprisingly simple to prepare and consistently receives rave reviews, quickly becoming a firm favorite among guests. The fresh ingredients elevate it far beyond any store-bought alternative, offering a depth of flavor that is truly unparalleled.

The beer cheddar cheese dip offers a distinct flavor profile, combining the malty notes of beer with the sharp, creamy goodness of cheddar cheese. This unique pairing was inspired by a recent cheese box I received from Cabot Creamery, and the results were nothing short of spectacular. This dip is an absolute dream for dipping soft pretzel bites, creating a savory sensation that is utterly addictive. It’s incredibly flavorful and so popular that you’ll be lucky to have any leftovers, no matter how much you make! The subtle bitterness of the beer perfectly complements the richness of the cheese, creating a balanced and sophisticated dip that appeals to a wide range of tastes. Consider using a local craft beer for an extra special touch.

While these dips are perfectly tailored for game day festivities, their versatility extends far beyond. They are equally fantastic for cozy movie nights, lively parties, or simply whenever a craving for a warm, cheesy dip strikes. Imagine them as a comforting addition to a casual family dinner or as an impressive appetizer for unexpected guests. Their rich flavors and creamy textures make them a welcome addition to any gathering, big or small. You can even experiment with different dippers, such as crisp apple slices, crusty bread, or even blanched broccoli florets, to expand the culinary possibilities.

Crafting Your Game Day Charcuterie Board: A Step-by-Step Guide to Perfection

Assembling a spectacular charcuterie board is an art form, and for game day, it’s all about creating an inviting and easily accessible spread that caters to all tastes. Beyond the incredible dips, the key is to incorporate a variety of textures, colors, and flavors to keep things exciting. Think about contrasting crunchy chips with soft pretzels, sweet fruits with savory vegetables, and ensuring there’s something for everyone to enjoy. A well-curated board not only tastes amazing but also serves as an eye-catching centerpiece, sparking conversations and encouraging communal enjoyment.

Start by choosing a large, sturdy board or platter as your canvas. Wooden boards add a rustic charm, while slate or ceramic platters offer a more modern aesthetic. Begin by placing your two star dips – the Homemade Queso and the Beer Cheddar Cheese Dip – in attractive, small serving bowls. These will anchor your board and provide a focal point. Then, artfully arrange your dippers around them, creating pockets of deliciousness. Don’t be afraid to overlap and cluster items; a full, abundant board looks more enticing. Fill in any gaps with smaller items like nuts, olives, or cherry tomatoes for a truly abundant presentation. The goal is to make it look effortless yet thoughtfully composed, inviting guests to dig in and savor every element.

Place the bowls of queso and beer cheddar dip first, as they are the focal points. How to Store Leftover Dips and Keep Them Fresh

Should you find yourself with any delectable leftover dip – a rare occurrence, but certainly possible – proper storage is key to maintaining its freshness and flavor. Transfer the cooled dip into airtight containers and store them promptly in your refrigerator. When stored correctly, these dips will remain delicious for up to 5 days, making them perfect for enjoying later in the week as a snack or part of another meal.

When you’re ready to enjoy the dips again, simply reheat them gently in a saucepan over low to medium heat. Whisk continuously until the dip is warmed through and regains its smooth consistency. If you find the dip has thickened too much during refrigeration, you can easily thin it out by whisking in a small amount of extra milk or half & half until it reaches your desired creamy texture. This simple reheating method ensures your dips are just as enjoyable as they were on game day.

Homemade Queso Dip

Homemade queso dip
Yield: 10 servings

Homemade Queso Dip

This homemade queso dip is the ideal appetizer for parties and game nights. Crafted with simple, fresh ingredients, it’s incredibly easy to make and delivers an unbelievably amazing, cheesy flavor!

Prep Time
15 minutes
Cook Time
20 minutes
Total Time
35 minutes

Ingredients

  • 2 tablespoons unsalted butter
  • 1 small yellow onion, chopped
  • 1 small jalapeño pepper, finely diced (remove seeds for less heat)
  • 2 cloves garlic, minced
  • 1 medium tomato, chopped
  • 1 (7-ounce) can diced green chilies, undrained
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2/3 cup half and half
  • 8 ounces sharp cheddar cheese, block (NOT pre-shredded, freshly grated for best melt)
  • 1 tablespoon cornstarch
  • ¼ cup coarsely chopped fresh cilantro, for garnish

Instructions

  1. In a large saucepan set over medium heat, melt the butter. Add the chopped onion and diced jalapeño. Cook until they soften and become translucent, about 3-4 minutes, stirring occasionally.
  2. Add in the minced garlic and cook for another minute until fragrant. Stir in half of the chopped tomatoes and the green chiles (with their liquid). Continue to cook until the tomatoes soften slightly, about 2-3 minutes.
  3. Stir in the ground cumin and season generously with kosher salt and freshly ground black pepper. Pour in the half and half and bring the mixture to a low simmer, stirring constantly to prevent scorching.
  4. Reduce the heat to low. In a small bowl, whisk the cornstarch with 1-2 tablespoons of cold water to create a slurry, then stir it into the simmering mixture. Gradually add the freshly shredded sharp cheddar cheese, about ½ cup at a time, whisking constantly after each addition until all the cheese is completely melted and the sauce is thick and smooth, which should take approximately 3-5 minutes.
  5. Remove the saucepan from the heat. Transfer the creamy queso dip to a warm serving bowl. Garnish with the remaining fresh tomatoes, cilantro, and a few extra slices of jalapeño peppers for a touch of color and spice. Serve immediately with your favorite dippers.

Prep Time

Cook Time

Total Time
30 minutes

Ingredients

  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon salt
  • 1 teaspoon Worcestershire sauce
  • 1 cup beer (a light lager or ale works well)
  • ¾ cup whole milk
  • 10 ounces seriously sharp cheddar cheese (about 2 1/2 cups), freshly grated (do not use pre-shredded cheese for optimal melt)

Instructions

  1. Melt the unsalted butter in a medium saucepan over medium heat. Once melted, add the all-purpose flour, garlic powder, smoked paprika, and salt. Whisk continuously for about 1 minute until the flour is thoroughly combined and forms a smooth roux.
  2. While constantly whisking, slowly pour in the beer and then the whole milk. Bring the mixture to a gentle simmer over medium heat, continuing to whisk often to ensure a smooth consistency. Continue to cook, stirring frequently, until the sauce thickens enough to generously coat the back of a spoon, which typically takes about 5 minutes.
  3. Reduce the heat to low. Add the freshly grated sharp cheddar cheese a handful at a time, whisking vigorously between each addition. Continue this process until all the cheese is fully melted into the sauce and the dip is perfectly smooth and creamy before adding more. Serve this luscious beer cheddar cheese dip immediately with soft pretzel bites, crackers, or fresh vegetables.
