Given my recent obsession with key limes – you might recall my Coconut Key Lime Panna Cotta from last week – these cupcakes were a natural progression. They just scream Spring and even bring to mind sweet Mother’s Day celebrations!
These Key Lime Cupcakes start with a perfectly fluffy white cake base, which I then generously infuse with the bright, tangy zest and juice of fresh key limes. The subtle citrus notes permeate every bite of the moist cake, creating a delightful foundation. To crown this masterpiece, each cupcake is topped with a luscious, sweet, and incredibly creamy key lime buttercream. Ingredients
For Key Lime Cupcakes
- • 1 large egg plus 2 large egg whites
- • 3 ounces cream of coconut + 2 tablespoons water OR 1/2 cup milk (full-fat for richness)
- • 1 teaspoon fresh key lime zest
- • ½ teaspoon pure vanilla extract
- • 2 teaspoons fresh key lime juice
- • 1 cup plus 2 tablespoons cake flour (sifted for extra lightness)
- • ½ cup granulated sugar
- • ½ tablespoon baking powder
- • ½ teaspoon salt
- • 6 tablespoons unsalted butter, softened at room temperature and cut into pieces
For Key Lime Frosting
- • 3 sticks unsalted butter, softened and cut into cubes
- • 3 cups confectioners’ sugar, sifted (for a smooth frosting)
- • 2-3 tablespoons milk
- • 1 teaspoon pure vanilla extract
- • 1 teaspoon fresh key lime zest
- • 2 teaspoons fresh key lime juice
- • pinch of salt
- • 2-3 drops food color gel paste of your choice (optional, for pastel shades)
Instructions
- Preheat oven to 350°F (175°C). Line muffin tins with cupcake liners, ensuring they are ready for the batter.
- In a small bowl, whisk together the large egg and egg whites until just combined. Gently whisk in the cream of coconut + water (or milk if using), the vibrant zest and juice of key limes, and the vanilla extract. Set this wet mixture aside.
- In the bowl of a stand mixer fitted with the paddle attachment (or a large bowl with a hand mixer), combine the sifted cake flour, granulated sugar, baking powder, and salt. Mix on low speed for one minute to ensure all dry ingredients are well incorporated.
- With the mixer still on low, add the softened unsalted butter, one piece at a time, mixing until only pea-sized pieces of butter remain in the flour mixture, which should take about 1 minute.
- Now, add half of the prepared egg mixture to the flour mixture. Increase the mixer speed to medium-high and beat until the batter becomes light and fluffy, usually about 1 minute. Scrape down the sides of the bowl as needed.
- Reduce the speed to low and gradually add in the remaining egg mixture. Mix on low speed until just combined, approximately 30 seconds. Be careful not to overmix the cake batter, as this can lead to dense cupcakes. Finish by stirring the batter once by hand with a rubber spatula to catch any unmixed ingredients at the bottom of the bowl.
- Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
- Bake the cupcakes for 12-15 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. This indicates they are perfectly baked.
- Let the cupcakes cool in the muffin pan for 1 minute before carefully removing them to a wire rack to cool completely. They must be completely cool before frosting.
For the Key Lime Frosting:
- Begin by whipping the softened butter in the bowl of an electric mixer fitted with the paddle attachment for a full 8 minutes on medium speed. This extended whipping time is crucial; the butter will become noticeably pale, incredibly creamy, and very light.
- Add the sifted confectioners’ sugar, milk, vanilla extract, key lime zest, key lime juice, and a pinch of salt to the whipped butter. Mix on low speed for 1 minute to combine the ingredients without creating a cloud of sugar.
- Increase the mixer speed to medium-high and beat for an additional 6 minutes. The frosting will transform into an extremely light, airy, creamy, and fluffy consistency.
- If desired, add 2-3 drops of your chosen food color gel paste to achieve a delicate pastel shade. Whip for one more minute to evenly distribute the color.
- Once the cupcakes are completely cooled, frost them using a pastry bag fitted with your favorite tip. I achieved this look using Wilton Tip 2C.
Notes
If you decide to double this recipe, for best results in terms of texture and fluffiness, use 1 large egg and 5 large egg whites instead of simply doubling the whole egg measurement.
